FEBRUARY 22-25, 2007
Food Network South Beach Wine & Food Festival is a national, star-studded, four-day destination event showcasing the talents of the world’s most renowned wine and spirits producers, chefs and culinary personalities. Hosted by Southern Wine & Spirits of Florida and Florida International University (FIU), the festival benefits the Teaching Restaurant and the Southern Wine & Spirits Beverage Management Center, both located at FIU.
Now in its sixth year, the Food Network South Beach Wine & Food Festival began as a one-day festival known as the Florida Extravaganza held at FIU’s Biscayne Bay Campus. For five years, the Florida Extravaganza showcased wines from national and international wineries paired with food from local restaurants and chefs working with students of FIU’s School of Hospitality and Tourism Management.

On Saturday, February 24, the Food Network South Beach Wine & Food Festival invies you to feast on plates prepared by experts trained all over the world, and based on premium ingredients and an abundance of kitchen creativity all in our own back yard.
Each of these South Florida restaurants has created their own fittingly elegant feast in celebration of the 2007 Food Network South Beach Wine & Food Festival’s and the end result: a dining experience that reflects the high-quality and innovation inherent throughout the Festival. - Maison Louis Latour
Louis Fabrice Latour will present a vertical tasting of Grand Cru Chateau Corton Grancey, beginning with 1990 vintage and continuing through 2003. Mr. Latour will discourse on the distinct qualities and particularities of each vintage. Chateau Corton Grancey has been the heart of Domaine Latour since 1891. This world famous Pinot Noir is made from a blend of the finest casks from a handful of single vineyards in the appellation of Corton and is only released in exceptional years.
- Château Margaux
Paul Pontallier, Chateau Margaux’s General Director and winemaker, will come for a tutored tasting and show a selection of some of the best vintages of the wines of Chateau Margaux. He will introduce the guests to the reasons why Chateau Margaux is consistently producing great wines. He will share his passion for this great terroir as well as the sheer pleasure not only to taste but also to drink its wines.
- The Antinori Family: Past, Present and Future
Marchese Piero Antinori guides a family wine business that is remarkable for its unique amalgam of centuries’ old Tuscan and Umbrian tradition with modern innovation, making Antinori the premier wine producing family of Italy for more than 620 years. Of the company’s philosophy, Piero Antinori has said “Age-old roots play an important role in our philosophy, but they have not served to inhibit our innovative spirit.” In fact, while playing a vital role in the preservation of Italy’s enological traditions, his innovative, dynamic and visionary views have led to Italy’s recognition as a producer of world-class wine. Today, the 26th generation of the Antinori family, Piero Antinori’s daughters Albiera, Allegra and Alessia, are involved in all aspects of and will play important roles in the prestigious producer’s future.
This session will feature a special tour of the family’s estates in Bolgheri, Chianti, Montalcino, Montepulciano and Orvieto, all notable for rich cultural histories and acclaimed vineyards. The Festival once again invites those who seek a serious education in the finer things in life, whether novices or aficionados, to its teaching tastings. The Wine Spectator Wine Seminars bring together experts ready to share their unique knowledge and offer guests a comprehensive view of today’s vin scene. Learn about the special qualities of specific wines as well as the grapes and techniques that go into creating them. Wine Spectator executive editor Thomas Matthews will introduce each session, Riedel Crystal of America CEO Maximilian Riedel will educate guests about the advantages of finely crafted glassware, and vintners and principals from a variety of handpicked estates will lead the exciting range of tastings to follow. - Perrier Jouët – “Bouquet of Three Fleurs”
"For this special Wine Spectator Seminar, the House of Champagne Perrier Jouët lead by Chef de Caves Hervé Deschamps will present a special "Bouquet of Three Fleurs" tasting. By offering an evolution of varietals, vintages, and volumes, the attending VIPs experience first-hand the beautiful unfolding of Perrier Jouët’s favored flowers.
First: 750ml, Chardonnay focus, 1999 vintage: 1999 Fleur de Champagne Blanc de Blancs
Deschamps introduces the 'jewel in the proverbial crown' of the 'Three Fleurs" with Perrier Jouët's rare and highly-acclaimed, single varietal and single vineyard, the 1999 Fleur de Champagne Blanc de Blancs, presented in 750ml or single bottle format. This all-Chardonnay offering showcases the 100%-rated village and single 10-acre contiguous parcel from the adjoining Bourons-Leroy and Bourons-du-Midi vineyards.
Second: 1.5 L, Focus on Pinot Noir, 1999 vintage: 1999 Fleur de Champagne Rosé
From there, Deschamps transitions to the 1999 Fleur de Champagne Rosé. The common denominator of the 1999 vintage becomes the vantage point to discuss the differences in varietals (a Pinot Noir focus, transitioning from all Chardonnay) as well as sizes to a double (or magnum) size contrasting from the previous 750ml.
Third: 3L, Chardonnay with Pinot Noir, 1995 vintage: 1995 Fleur de Champagne
3 times the size, this third offering presents what our chef de caves says of the House that in the 1800s was the highest selling champagne by Christie’s: this could be one of the best bottlings still on the market at the moment - a 3L of 1995 Fleur de Champagne. An integration of both Chardonnay and Pinot Noir, this large format from the 1995 vintage delivers like a robust bunch of roses.
- The Historic Vineyards of Santa Barbara County
Join Jim Clendenen of Au Bon Climat and Frank Ostini of Hitching Post for a rare opportunity to taste both old and new Chardonnay’s and Pinot Noirs from some of the oldest vineyards in Santa Barbara County. Included in this taste of history will be wines from Sanford & Benedict Vineyard, Bien Nacido Vineyard and Los Alamos Vineyard.
- Peter and Robert Mondavi Family Seminar
Join Thomas Matthews, executive editor of Wine Spectator, as he welcomes Robert and Peter Mondavi, icons of the Napa Valley wine scene and co-recipients of the 2007 Southern Wine & Spirits Lifetime Achievement Award. Accompanied by their children Marc, Peter Jr., Tim and Marcia, the pioneering brothers will guide attendees through a tasting of Robert Mondavi and Charles Krug - Peter Mondavi Family wines as well as samplings of pre-1965 Charles Krug wines produced by Peter and Robert.
Among the stellar offerings at the table will be the brothers’ most-recent collaborative effort: Ancora Una Volta. This 2004 Cabernet Sauvignon celebrates their family bond, unites their individual passions for winemaking and showcases the finest grapes from their respective vineyards.
- Château Haut-Brion
In 1664, Madame de Lestonnac bequeathed the Domaine of La Mission Haut-Brion to the Lazaristes Monks, a congregation founded by Saint Vincent de Paul. The “good fathers” worked to restore their property to its rightful worth. After them, the Chiapella family (owners in the 19th century) and Woltner family (owners between 1919 and 1983) never stopped improving the vineyard and modernizing the chai.
In 1983, the Dillon family, already owner of Château Haut-Brion, purchased the Château La Mission Haut-Brion. Founded in 1533, Château Haut-Brion has a long and distinguished history. It was the first wine sold under the name of its vineyard site, as opposed to larger geographical appellations. It is the oldest and smallest of the four First Growth Properties classified in the 1855 classification of the Gironde wines.
Since 1935, the estate belongs to the Dillon family. Château Haut-Brion was bought by an American, Clarence Dillon, and is managed today by his granddaughter, Madame la Duchesse de Mouchy, President, and her son, H.R.H Prince Robert of Luxembourg, Vice President and Managing Director of Domaine Clarence Dillon.
Today, H.R.H. Prince Robert of Luxembourg, and Mr. Jean-Philippe Delmas, Estate Manager, will offer you the possibility to taste all the wines produced in both Estates by presenting you the 1998 vintage. Undoubtedly, this is a one in a lifetime experience…

The pair will be feted tonight with an unforgettable meal prepared by some of their friends, among them Daniel Boulud (Daniel, New York), Laurent Gras (formerly of Fifth Floor, San Francisco), Elena Arzak (Restaurante Arzak), Marc Ehrler (Loews Miami Beach), Tony Esnault (Alain Ducasse at the Essex House), Norman Van Aken (Norman's, Coral Gables) and Le Bernardin’s own pastry chef Michael Laiskonis.
The history of Le Bernardin pre-dates Le Coze and Ripert’s meeting by nearly 20 years and begins in 1972, when Le Coze and her late brother Gilbert started what would become one of the most surprisingly successful restaurants in Paris. Opened on a shoestring budget and with their parents helping in the kitchen, Le Bernardin earned the first of two Michelin stars within four years on the strength of Gilbert’s excellent seafood-only menu and Maguy’s energy and drive in the dining room. Inspired by the triumph and growing international reputation of Le Bernardin in Paris, the Le Cozes opened Le Bernardin in New York in 1986 – today a culinary landmark and the city’s only four-star seafood restaurant.
Keeping the kitchen fire going following the death of Gilbert, Ripert stepped up from the position of sous chef to ensure the enduring quality and excitement of Le Bernardin’s offerings.
