Outrageous fun awaits guests at the third annual Amstel Light Burger Bash held on the beautiful beach of The Ritz-Carlton, South Beach. Mostly featuring beef – although look for a few notable and delicious exceptions – the friendly competition ends when hostess Rachael Ray tallies up the votes and announces the winner of the “People’s Choice Award.” It’s a great night to kick back with a cold one – a perfectly chilled Amstel Light, to be exact – and enjoy an amazing variety of top-notch burgers.

The 2009 Food Network South Beach Wine & Food Festival and Southern Wine & Spirits of America is pleased to announce an unprecedented tribute to the wines and foods of Spain to be held in the presence of Their Majesties King Juan Carlos I and Queen Sofia of Spain. Taking place on Thursday, February 19, 2009, the distinguished gala will benefit the School of Hospitality & Tourism Management at Florida International University and Fundación España-Florida: celebrating 500 years of Spanish presence in Florida.

¡Bienvenidos a España! The Festival gathers Spain’s best-known chefs in a show of Iberian haute cuisine. The multi-course feast will honor Spain’s growing reputation for innovation in the kitchen and focus on the abundant Andalucia, Alicante and Basque regions, each with something unique to bring to the table. While delicacies and traditional ingredients will take center stage, the variety of preparations, food combinations and fresh approaches should elevate flavor to a whole new level. The renowned talents charged with creating dinner this evening will do so in grand style under the direction of the evening's Culinary Chairman, Spanish TV cooking personality José Andrés, one of the most successful Spanish chefs in America with several restaurants in the Washington, D.C. area and a new hotel and restaurant in Beverly Hills. Andrés will lead an all star cast of Spanish chefs including Pedro Subijana, whose Akelarre restaurant in the resort area of San Sebastian is Michelin 3-star rated; Daniel Garcia, the youngest of Spain’s celebrated “10 Chefs de Vanguardia,” a group of masters considered among the country’s most ground-breaking; and Francisco (Paco) Torreblanca, considered the best master patissier in Spain and, some say, in Europe. And before that spectacular meal even begins, several other noted chefs will stimulate the palate with a reception menu representing the Basque province of Bizkaia, including the dashing celebrity chef Aitor Elizegi of the popular Gaminiz restaurant and the brilliant Aitor Basabe, who presides over the highly regarded restaurant at the Museo de Bellas Artes in Bilbao. Accenting this showcase of Spain’s culinary excellence: the Wines of Spain, a collection of some of the country’s finest vintages, each hand selected to perfectly complement the individual dishes. Unique and rare, the wines will embody the history as well as the future of Spain’s colorful and evolving culture, an opportunity for all in attendance to indulge in the deep richness of a land at once old and new. And to top off a perfect evening, enjoy fine cigars from Jorge Padron and rare sherries and brandies from Spain immediately following dinner, outside in our beautiful After-Lounge on the Country Club Terrace. Come taste for yourself in the splendor of Miami's legendary Biltmore. With its distinctive tower inspired by the Giralda tower in Seville, the Biltmore provides a perfect complement to this evening's celebration.

The evening will be emceed by none-other than Mario Batali, author of Spain . . . A Culinary Road Trip (Ecco 2008) and co-host of “Spain . . . on the road Again” with Gwyneth Paltrow, which airs locally on public television and PBS. Batali has long been recognized for making a mark on the culinary scene and, among other honors, is winner of the James Beard Foundation's "Best Chef: New York City" award and "Outstanding Chef of the Year", in 2002 and 2005 respectively. A celebrated chef, Batali has 14 restaurants spanning New York City, Las Vegas and Los Angeles, and is known for his former Food Network show “Molto Mario” and culinary battles on “Iron Chef America”.

Location: Kovens Conference Center, North Miami. FIU Biscayne Bay Campus

DIONYSUS is a one-day conference bringing together nationally recognized alcohol researchers to discuss drinking policies and practices. DIONYSUS is an acronym for "Drinking: Issues, Opinions, News, Youth, Surveillance, Under-the-influence, & Society." The short-term goal of the conference is to examine health and social issues associated with drinking from the perspectives of researchers working in the area of drinking. The long-term goal of the conference is to enhance public health through the adoption of rational, compassionate, and healthful drinking policies and practices.

This invitation-only meeting includes four scientific sessions, each addressing an important social or public health concern related to drinking, and each involving three pre-eminent NIH-funded scientists and a discussant. The charge put to each of the speakers is to make a case in a 10-minute presentation for the three most important "real-life" priorities in their assigned area. The discussant is charged with summarizing the presentations, and moderating discussion following the presentations. Conference speakers and discussants also provide 10-page position papers, which are published in conference proceedings, which will be publically distributed free-of-charge. The mission of each scientific session, and the entire conference, is to come to some sort of consensus among alcohol research scientists about drinking matters that really matter.

My motivation for organizing the DIONYSUS conference is a desire to enhance public health through the adoption of rational, compassionate, and healthful drinking policies and practices. Too often (and especially in the US), alcohol-related policies and practices are based on idiosyncratic interpretations of what is right and wrong, with moral and/or religious overtones, and in total ignorance of what researchers studying drinking phenomena have found. Conversely, researchers studying drinking phenomena (and I include myself here) have a tendency to present their findings only to one another in scientific venues, and avoid getting involved in public health and social policies related to drinking, leaving that job to politicians and policy-makers. The DIONYSUS conference expressly asks the participating alcohol researchers to address "real-life" alcohol issues from an empirical perspective, and to suggest how policies and practices may be best employed to enhance public health and well-being.

Screaming Eagle came flying out of the gate with the first vintage in 1992. James Laube of Wine Spectator singled out this Oakville Cabernet Sauvignon as “the wine of the vintage” and Robert Parker called the wine “exceptionally impressive” and awarded 99 points. Heidi Peterson crafted the wine over the years producing an elegant cabernet full of flavor and finesse.

Screaming Eagle now enters an extremely exciting new chapter. The property sold in the spring of 2006. Almost immediately the new owners set upon an extensive replanting of the vineyards. This seminar offers a discussion of Screaming Eagle’s terroir by illustrating with library vintages, and a look to the property’s future with commentary by Ursula Hermacinski. Wine Spectator Senior Editor Bruce Sanderson will introduce this session.

The Queen of Southern Cuisine is hosting a Las Vegas style casino party with the help of Harrah’s Casino Tunica and you are invited. Proceeds go to scholarships and support of related programs at the FIU School of Hospitality and Tourism Management.

Everyone’s a high roller in Paula’s casino. Roll the bones, hit 21, go all in, or bet everything on red as you show Paula and all of her Food Network friends how lucky you are playing craps, blackjack, poker, and roulette with play money while sipping on fancy Ketel One Vodka cocktails.

That’s right; this is your chance to party it up Las Vegas style with everyone’s favorite Southern girl, Paula Deen, and other Food Network personalities. So get gussied up and head down to The Paris Theatre as it’s transformed into Sin City for the night. Just remember, what happens in Vegas stays in Vegas.

It’s hard to remember a time when innovation in the kitchen seemed more prevalent. Chefs appear to be experimenting more than ever with new ingredients and applying techniques never used before in a restaurant setting. This experimentation not only requires trial and error but also a team approach comprised of chefs, collaborators, and scientists to achieve a successful and worthwhile outcome.

Join us for a moderated panel discussion which will bring together members of this “team” to discuss their roles, how they work and communicate with each other, how dishes are conceptualized, and ultimately brought together. This discussion will take place on the heels of the Viva España dinner where these very innovative chefs will have displayed their grand culinary ingenuity.

Panel chefs include Daniel Garcia, the first chef to incorporate liquid nitrogen into cooking in Spain, Katsuya Fukushima, Culinary Director of ThinkFoodGroup, the management company responsible for José Andrés restaurants, and Ruben Garcia, Director of Research & Development of ThinkFoodGroup. Harold McGee, author of the seminal On Food & Cooking and considered by many of the world’s top chefs an indispensable source of information, will offer the scientific perspective for the panel, which will be moderated by Josh Ozersky, Restaurants Editor for Citysearch.

Nothing compares to a meal made from the finest ingredients, and nothing compares to the satisfaction of feasting on local, organic ingredients crafted by chefs who revere the soil and believe in the healthy, healing power of good cooking. Tonight’s meal is about much more than delicious food; it’s about understanding the connection between the individual components of a meal – the fresh produce, the homegrown herbs, the gently harvested legumes and other foods grown in harmony with the earth – and the way in which dedicated chefs choose to highlight their inherent flavors. Eschewing processed seasonings and all corner-cutting conveniences of mass production, the cooks will rely instead on simple preparations that accent the natural flavors of just-picked fruits and vegetables, organic cheeses and healthful grains that together feed both body and soul. Hosted by Michael Schwartz, chef/owner of Michael’s Genuine Food & Drink in Miami, and set outdoors at lovely Paradise Farms, dinner beneath the stars will offer a refreshing change of pace. The dinner also includes a guided tour of the beautiful grounds by Paradise Farms owner and Dinner in Paradise co-founder Gabriele Marewski.

He is America’s most recognized living chef, a man known to millions by his first name alone. And tonight, the Food Network South Beach Wine & Food Festival celebrates his legacy even while anticipating his brilliant and unfolding future. Emeril “Bam” Lagasse was the first television chef to turn the cooking show into an entertainment form. Even folks with no plans to cook up his famous oven-crispy cheese fries recipe or assemble his decadent blazing banana split sundae have tuned in over the years just to witness Emeril’s zest for life, down-to-earth delivery and ever-ready sense of humor. Indicative of his stature among both the eating public – which has turned his 10 restaurants into grand successes – and his peers in the culinary industry, some of the world’s most acclaimed chefs are eagerly stepping forward to prepare a meal in Emeril’s honor. And adding yet another wow factor to this grand evening: none other than Martha Stewart herself – the Festival’s 2007 Lifetime Achievement Award recipient and a dear friend of Emeril – will serve as emcee. Come join the assembled luminaries as they pay tribute to the original Food Network star at the Festival’s host hotel, the Loews Miami Beach with Executive Chef Gordon Maybury. Larry Stone, one of America’s most influential sommeliers, will select the ideal wines to accompany each magnificent course of this very special celebration, which launches with a killer Champagne Nicolas Feuillatte reception masterminded by Nobu Miami Beach Executive Chef Thomas Buckley.

              • Grupo Barón de Ley: The many faces of Tempranillo

The origins of the Barón de Ley group go back to 1970, with the first vintage of El Coto de Rioja. At that time a new Spain was slowly emerging, and an unprecedented cycle of growth and dynamism permeated all layers of Spanish society. In a very short time El Coto de Rioja, under the brands El Coto and Coto de Imaz, gained a substantial share of the Spanish Rioja market (the only region where quality wines were a reality at the time). The success of El Coto, which grew substantially through this period both domestically and abroad, was followed in 1985 by the foundation of a new, smaller winery, Barón de Ley, in the tradition of the French chateau model. The search for excellence was later followed by Finca Museum, a new addition in one of the smallest and less-known wine appellations in Spain: Cigales. The group, which already aimed at a more modern concept of Rioja wines, has kept evolving through the years, keeping an eye on new trends and vinification techniques while preserving the identity of its Riojan roots. Discover the best Spain has to offer through this fine selection of wines from all the Grupo Barón de Ley wineries.

America’s love affair with sushi continues to grow and, when dining on the delicacies, the question that inevitably comes up is “What shall we drink?” Well, wonder no more. Chef Thomas Buckley will prepare recipes designed by the master himself, Chef Nobu, as described in Nobu Miami: The Party Cookbook, and Master Sommelier Alpana Singh will select the right wines and sakes to accent them. On the menu: the freshest crudo, sushi and sashimi, as well as ceviche. This will be as much a learning opportunity as a chance to indulge your love of sushi!

An icon of style and grace, Audrey Hepburn adored breakfast at Tiffany's in New York - but only because Dolce Brunch, pairing America's most prestigious late harvest wine with Tiffany's and held on South Beach, did not yet exist! On this lovely morning, elegance reigns supreme under the watchful eye of hostess Katie Lee Joel (cookbook author and wife of Billy, who can attest to her impeccable hospitality skills). Set in the chic dining room of the fashionable and ultra-cool Delano Hotel, this tres-chic gathering is all about turning the ordinary into something very special. And in the hands of rapidly rising Food Network star chef Anne Burrell - the spiky-haired blonde who for years assisted an Iron Chef but now has her own show - the dishes will shine with the infusion of unusual ingredients and unique preparations. The food on your plate will mirror the stylish surroundings and call for nothing short of pairing with the perfect wine: Dolce, known as "Liquid Gold from Napa Valley," the product of Mother Nature and craftsmanship that together define luxury. Even Audrey would be impressed!

If pizza, hot dogs and chicken nuggets sum up your picky eater’s food repertoire, then this educational symposium designed to give your child a nutritional head start in life is for you. New York Times wellness columnist Tara Parker-Pope will host an all-star panel that includes Rachael Ray, founder of the nonprofit Yum-O!; Dr. Arthur Agatston, cardiologist and founder of the South Beach Diet; Jessica Seinfeld, founder and president of the nonprofit Baby Buggy and Tom Colicchio, head judge on Top Chef, founder of Craft restaurants and father.

At every turn, it seems, parents are at a disadvantage when it comes to feeding their children well. Our modern lifestyles leave us pressed for time and overscheduled, which too often leads to less-than-great choices at mealtimes.

Beyond Chicken Nuggets: How to Raise a Healthy Eater aims to put an end to our fast food fixation and over reliance on highly processed grocery store finds. This stellar lineup of experts will discuss real-world solutions in the context of how families live today. Get great advice and learn simple strategies that can put an end to food battles and expand menu options. Find out how to make better choices and greatly change how your family eats – all with minimal fuss and maximum benefits.

The discussion will be followed by an audience question-and-answer session, and ticket holders are invited to enjoy Fun and Fit as a Family at Jungle Island for the remainder of the day.

Miami nights couldn’t get any hotter than at the Patrón Soiree, aka Cold Fusion, the coolest party of the weekend. The event pits hot vs. cold, spicy vs. cool, and fire vs. ice via a custom cocktail list featuring Patrón Tequila, Pyrat Rum and Ultimat Vodka; hors d’oeuvres by Chris Santos of NYC’s Stanton Social; and scintillating beats laid down by world-class spin-tologist, DJ Irie. Think margarita snocones, spiked Italian ice made with liquid nitrogen, ice-cold hot chocolate and much, much more. The debate is in your hands. What are you, a little devil or a cool customer? Sip, savor and sway your way to the answer.

Perfection is debatable. Missing this party is not.

Barbecue ranks among everyone’s favorite ways to cook and eat. But when it comes to drinking, we often turn to beer or even soda as a first-choice accompaniment. Let Master Sommelier Alpana Singh demystify pairing wine with grilled meals when she and Chef Howie Kleinberg (from Top Chef, and soon to open his very own barbecue joint) have a meeting of the minds. While Howie offers great backyard-barbecuing tips and discusses the secrets behind the sauce, Alpana will tackle the appropriate styles of wine for accenting the regional variations found in American barbecue. Whether it’s dry-rubbed, hickory smoked, dipped or marinated, pulled or cooked with the tail on, leave it to Alpana and Howie to show you the way.

The Vega Sicilia estate goes back many centuries, but perhaps the most significant date in the history of the property was 1864, when Don Eloy Lecanda, who had inherited the estate from his father, came back from Bordeaux with cuttings of Cabernet Sauvignon, Merlot and Malbec. He planted these alongside the local black grape Tinto Fino (which is in fact Tempranillo), and began making wine of vastly superior quality to that of his neighbors’. He used the name Bodegas Lecanda, and it was not until the beginning of the 20th century that new owners, the Herreros brothers, started calling the wine Vega Sicilia. The Herreros instigated a philosophy of “quality at any cost,” and Vega acquired a fame and prestige far in excess of its lowly table wine status. This has remained the guiding principle of the bodega ever since. More than ever, Vega Sicilia justifies its reputation as Spain’s first growth, one of the very greatest red wines in the world. This seminar will feature a vertical tasting of Vega Sicilia signature Unico and will offer a unique opportunity to taste older vintages (1969, 1987, 1994, 1998). Valbueno 5° (2000 and 2004) will also be presented along with a wonderful selection of La Rioja Alta, S.A. wines. Wine Spectator Executive Editor Thomas Matthews will introduce this session.

Warren Winiarski is a renowned figure in American winemaking, thanks in part to the now-famous Paris Tasting of 1976 when his 1973 Stag's Leap Wine Cellars Cabernet Sauvignon bested some of the greatest wines of Bordeaux.  The wines of Stag's Leap Wine Cellars have continued to garner acclaim ever since, guided by an unwavering vision to fashion wines of richness balanced by elegance & restraint.  It's an approach Warren refers to as "an iron fist in a velvet glove."  Warren, who has earned a reputation for meticulous attention to detail in the vineyard and in the cellar, will present insights into the ways in which human choices interact with a vineyard's terroir to influence the character of grapes and wine.  The interplay of vineyard sites, vintages, and winemaking choices, come to life in this tasting of current and library wines from Stag's Leap Wine Cellars Estate vineyards.

Carlos Falcó, the Marqués de Griñón, shall speak about his pioneering viticultural work with French grape varieties in his Dominio de Valdepusa Estate in the Mountains of Toledo, Spain. He is internationally recognized for introducing Syrah and Petit Verdot to Spain and for his visionary work with Cabernet Sauvignon in Castilla La Mancha. The Dominio de Valdepusa Estate produces some of the most innovative wines in Spain. Thanks to the quality of its wines and for the role that it has played within the world of Spanish viticulture, this estate has been recognised by the Spanish state as the first official “Vino de Pago” of the country and since the 2002 vintage has its own “Denominación de Origen”. Forty two hectares are currently planted with vines, including the original vineyard (14 Ha) of Cabernet Sauvignon (1974). Since 1991, it has been progressively enlarged with Syrah (1991); Petit Verdot (1992) –both pioneers in Spain- and Graciano (2000) using Lyre and Smart-Dyson canopies. The use of these modern trellises advised by Dr. Richard Smart, the famous australian viticulturalist who has been a consultant to the Valdepusa estate since 1992, allows even exposure of bunches and leaves to sunlight and therefore uniform ripening, a key factor in the high quality of all Valdepusa wines.

Carlos Falcó also pioneered in 1974 the first drip irrigation system in Europe and, possibly, the world. Carlos Falcó is widely recognised as a spearhead in the modernisation of viticulture and wine making in Spain. He holds an agricultural engineering degree from the University of Louvain in Belgium and also graduated at the University of California (Davis) in 1963-64. He introduced the Syrah and Petit Verdot varieties in Spain, as well as Cabernet Sauvignon in Castilla La Mancha. His internationally renowned Dominio de Valdepusa estate in Toledo has been at the centre of his pioneering techniques with the introduction of drip irrigation (1974), Smart Dyson canopy management (1994), partial root dying (PRD) in 1999 and the use of electronic controls known as dendrometers to monitor water stress in the vines.

Upgrade your wine skills exponentially during this fascinating and informative session with Master Sommelier Larry Stone. He will explain the importance of geography to wine when he explores the terroir of Rubicon Estate. Through examples of several vintages, he will guide you in recognizing the perceptible underlying influence of the land in the wine’s taste. Rubicon Estate is situated on one of the most distinctive sites in Napa Valley. It was founded as a wine estate by Gustave Niebaum in 1880 and has been farmed organically since its inception, making it an ideal case for the study of terroir.

And, just when it couldn’t get any sweeter, enjoy a slice of Joe’s perfectly tart Key Lime Pie to finish off a perfect brunch.

If you’re feeling a little left of center on the morning after the night before, master mixologist Tony Abou-Ganim might just have the cure. Join him as he shows you how to concoct some of the classic "next day" remedies (which double as great brunch ideas!) such as Pete Petiot’s Bloody Mary and the Ramos Gin Fizz. If you’re ailing, Dr. Tony’s got your prescription.

It’s all hands on deck for this do-it-yourself feast with a twist: two star chefs will walk you through each phase of preparation and cooking and then sit down with you to enjoy the finished meal. Top Chef winners have to beat out the competition to earn their stripes, so Ilan Hall (season 2) and Hung Huynh (season 3) have felt the heat and managed to come out ahead. In charge of their own Interactive Cooking lunch – a Festival annual event that has guests rolling up their sleeves to help out – will these two brash, young chefs dish out their own brand of bitter directives, or will they live up to their reputations as nice guys with a passion for the kitchen? Find out when you join them for a light-hearted, thorough delicious afternoon with special guest Gail Simmons.
