2010 FOOD NETWORK SOUTH BEACH WINE & FOOD FESTIVAL

FEBRUARY 25-28, 2010

The Food Network South Beach Wine & Food Festival presented by Food & Wine is a national, star-studded, four-day destination event showcasing the talents of the world’s most renowned wine and spirits producers, chefs and culinary personalities. Hosted by Southern Wine & Spirits of Florida and Florida International University (FIU), the festival benefits FIU’s School of Hospitality and Tourism Management Teaching Restaurant and the Southern Wine & Spirits Beverage Management Center.

To date, the Festival has raised over $8 million for the School. In 2011, the Festival will celebrate its 10th anniversary and will commemorate it with the release of Festival Director, Lee Brian Schrager’s book, Food Network South Beach Wine & Food Festival Cookbook (Clarkson Potter, Fall 2010), in collaboration with Julie Mautner.

                                          Superstar chef Daniel Boulud has come a long way since his childhood on the family farm in Lyon, France. No stranger to feeding presidents and kings, not to mention show-business royalty and titans of high finance, the chef built his reputation as one of America’s leading culinary authorities in the highly demanding and critically exacting city of New York. With no fewer than ten award-winning restaurants to his credit (and others in the works), he remains a culinary innovator that towers among the giants in the field and commands an almost cult-like devotion from his legions of fans. Raised in a household that ran a café in the family home, serving his firsts kitchen apprenticeship at age 14 and going on to train with France’s most renowned chefs, the young Daniel honed the flawless French techniques that would figure so prominently in his later success.
                                          Yet for all his international success—his reach extends to restaurants in Vancouver and Beijing—Chef Boulud remains true to his upbringing, from which his culinary vision and long-held philosophy of cooking emanate.
                                           

                                          Chef Boulud’s trajectory of greatness skyrocketed in 1986 when he took on the role of executive chef at New York’s famed Le Cirque, during which time it grew into one of the most highly rated in the country. Soon after opening his self-titled Daniel in 1993, the restaurant earned a rating as one the top ten in the world by the International Herald Tribune, went on to garner a four-star rating from the New York Times, and just recently, in October of 2009, the restaurant earned the coveted three Michelin stars, making it just one of five in New York to have ever been so honored.

                                          Chef Boulud received Food & Wine’s Best New Chef Award in 1988, the James Beard Award for Best Chef of New York City in 1992, the James Beard Foundation’s “Outstanding Chef of the Year” in 1994 and “Outstanding Restaurateur” in 2006. In April 2007 he received the Culinary Humanitarian Award at the United Nations from the Adopt-a-Minefiled Foundation. The President of France made him a Chevalier de la Légion d'honneur in March 2006 in recognition for his contribution to the advancement of French culture.

                                          Tonight, some of the world’s most highly regarded chefs celebrate Mr. Boulud’s talent and pay homage to a career that foresees many years and accomplishments still ahead. The meal prepared will incorporate both the simplicity and boldness for which the guest of honor has earned international renown. The celebration will take place at the Festival host hotel, the Loews Miami Beach, a resplendent setting equal to this evening’s grand occasion. And Food & Wine’s Gail Simmons—once the special events manager for Chef Boulud’s restaurant empire—will host the festivities. A permanent judge on BRAVO’s Emmy—and James Beard Award–winning series Top Chef, she also makes frequent appearances at events and on television.

                                          Prior to dinner, guests will be treated to a Louis Roederer Cristal Reception beginning at 7 p.m., where everyone will enjoy a glass of Cristal 2002 accompanied by hors d’oeuvres prepared by executive chefs from some of Daniel Boulud’s own restaurants around the country. The jewel of the House of Louis Roederer, Cristal champagne was originally created in 1876 for the Tsar Alexander II of Russia.                                               To understand wine is to understand life itself. An ancient drink, wine has played a role throughout history and continues to inform our rituals today. For anyone who has ever enjoyed wine, this seminar series at the Gansevoort South offers a chance to take the pleasure to another level through important information that will make selecting and appreciating wines a much richer experience. This serious education focuses on key aspects of viniculture such as terroir (the characteristics of the land in which the grapes are grown), the varietal (the type of grape used to make the wine), technique, and aging, among others. Led by experts, each session provides an opportunity to deepen your knowledge of specific wines and identify the qualities of each that most appeal to you. Wine Spectator Executive Editor Thomas Matthews will introduce this session.

                                              1. Unforgettable tasting: '' La Vie en Rose by Pommery''
                                              Maison Pommery has always endeavored to uphold quality in the creation of its Rosé Champagnes that today help cement to the Maison’s international renown. Since 1836, Maison Pommery has shown its innovative flair with, for instance, the creation of Brut Nature in 1874 that prompted a real revolution
                                              in the world of Champagne.

                                              In 1928, Maison Pommery crafted the first Brut Rosé millésimé. In the second half of the 20th century, the Cuvée Louise Rosé with its legendary paleness, Springtime with its fruity flavor and Pink POP made up a unique range of flavors in Champagne. But there was one major missing link to start the 21st century and this has now been remedied with the launch of Rosé Apanage!

                                              2. Domaine Jean Grivot Seminar
                                              The Domaine will be showing an exceptional line-up with two of their flagship wines for a tasting of 4 vintages 2000-2002-2004-2007, with focus on one Premier Cru from Nuits-St-Georges and one Grand Cru, both the epitomy of the Burgundy Wine region and its greatness.

                                              Nuits-St-Georges Premier Cru "Les Boudots", one of the domaine's top wines produced from a very good vineyard plot of slightly over 2 Acres on the Vosne-Romanee side of Nuits-St-Georges Appellation. It combines the succulence of a Vosne-Romanée with the richness of a Nuits-St-Georges.

                                              Clos de Vougeot, one of the Grands Crus from the Domaine, was acquired in 1919 with a parcel of 5 Acres. Clos de Vougeot from Domaine Grivot is a full, powerful wine which is sometimes a little rough. It is robust when young and needs to be given time to mature and develop finesse and elegance. When it is mature it is a generous, velvety wine, full of truffles and scents of violets.

                                              3. Opus One
                                              In 1978 Baron Philippe de Rothschild and Robert Mondavi sat together at Château Mouton Rothschild. In less than two hours the two gentlemen had created the dream of Opus One: a single red wine of absolute quality that would reflect the personality and character of both partners. The two men imagined a seamless blend of their winemaking and cultures.

                                              The first of its kind, the joint venture began in Napa Valley with its first vintage in 1979. Released with great fanfare in 1984, Opus One has since grown to world wide recognition. The iconic winery, which evokes the elegance and balance of the partnership, was completed in 1991.

                                              While always following a singular vision, the wines of Opus One have been fashioned over the years by different winemakers from Château Mouton and Robert Mondavi. Beginning with the 2001 vintage, Opus One wines have been made by one winemaker, Michael Silacci. This tasting will take a look at the evolution of grape growing and winemaking philosophy and techniques at Opus One.

For anyone who has ever enjoyed wine, this seminar series at the Gansevoort South offers a chance to take the pleasure to another level through important information that will make selecting and appreciating wines a much richer experience. This serious education focuses on key aspects of viniculture such as terroir (the characteristics of the land in which the grapes are grown), the varietal (the type of grape used to make the wine), technique, and aging, among others. Led by experts, each session provides an opportunity to deepen your knowledge of specific wines and identify the qualities of each that most appeal to you. Wine Spectator Senior Editor Bruce Sanderson will introduce this session.

                                                          1. The Antinori’s Interpretation of Sangiovese
                                                          The Antinori family is universally recognized for revolutionizing Italian winemaking with their innovative approach to producing Sangiovese at the family’s Chianti Classico estate, Tignanello. The estate and its namesake wine represent everything that is Antinori: a rich history marked by tradition and a spirit of innovation, a love for the terroir, and an ongoing determination to perfect their Sangiovese vineyards and wines.

                                                          For nearly 40 years, Marchesi Antinori has been experimenting with Sangiovese to achieve stylistic perfection from regional terroir, and this focused fascination motivated the family to develop Sangiovese wines at other important sites in Tuscany. These include the family’s Badia a Passignano and Peppoli estates in Chianti Classico, Pian delle Vigne in Montalcino and La Braccesca in Montepulciano.

                                                          A comprehensive tasting exploration of Antinori’s affection for Sangiovese will be led by Piero Antinori’s daughter Alessia who, along with her sisters Albiera and Allegra, represents the 26th generation of the family.

                                                          Domaine Chandon
                                                          In 1973 Domaine Chandon became the first French-owned sparkling wine venture in the United States. The famous Champagne producer Moët & Chandon and acclaimed Cognac maker Hennessy combined forces with the mission of producing world-class sparkling wine in Napa Valley. They identified prime vineyard sites on Mt. Veeder, in Carneros and Yountville, the location Domaine Chandon now calls home.
                                                          Chandon’s first sparkling wine was released in 1976. In 1977 the Visitor Center opened along with Domaine Chandon’s fine dining restaurant, now called étoile, introducing fine dining to the Napa Valley.
                                                          True to its pioneering spirit, Domaine Chandon was the first winery to introduce smaller containers to preserve delicate grapes during harvest and to use Pinot Meunier in its sparkling wines. Domaine Chandon also introduced the popular Blanc de Noirs style to American consumers. In addition to producing world-class sparkling wines, Domaine Chandon also produces a portfolio of still wines from the classic champagne varietals: Chardonnay, Pinot Noir and Pinot Meunier.

                                                          Gloria Ferrer
                                                          Pioneers of sparkling wine from California’s Sonoma Carneros region, Gloria Ferrer Caves & Vineyards is distinguished by a commitment to the highest quality fruit nurtured in hand-tended vineyards, thinned for low yields. Owned and operated by the Ferrers, the Spanish family behind the Catalan-based cava house Freixenet, the winery is named for José Ferrer’s wife, Gloria. Founded in 1982, Gloria Ferrer was the first sparkling wine house established in California’s Sonoma Carneros region. Today, the winery cultivates 385 acres of sustainably farmed vineyard land for its ultra-premium, award-winning sparkling and still wines.

                                                          Mumm Napa
                                                          Mumm Napa draws from the rich heritage of Champagne Mumm of Reims, France while integrating a unique Napa Valley style to make internationally respected wines of excellent quality. Ludovic Dervin carries on the inspiration that began with Guy Devaux in making Mumm Napa wines, bringing the ripe character of Napa fruit to the forefront while maintaining the classic balance and structure necessary in an outstanding sparkling wine. These wines are led by the prestige cuvée DVX one of the most honored California sparkling wines each vintage and named in honor of the winery’s founding winemaker, the late Guy Devaux.

                                                          Roederer Estate
                                                          Join us for a special look into California’s Anderson Valley with a tasting of Roederer Estate’s sparkling wines: the Non Vintage Brut and the 2002 vintage of their Tête de Cuvee, L’Ermitage.
                                                          Roederer Estate Brut is the first California sparkling wine to be produced by Champagne Louis Roederer, further building upon a 200-year tradition of fine winemaking from this family owned company. Roederer's unique winemaking style is based on two elements: complete ownership of its vineyards and the addition of oak-aged reserve wines to each year's blend or cuvée.
