
2011 FOOD NETWORK SOUTH BEACH WINE & FOOD FESTIVAL
FEBRUARY 24-27, 2011
The Food Network South Beach Wine & Food Festival presented by Food & Wine is a national, star-studded, four-day destination event showcasing the talents of the world’s most renowned wine and spirits producers, chefs and culinary personalities. Hosted by Southern Wine & Spirits of Florida and Florida International University (FIU), the festival benefits FIU’s School of Hospitality and Tourism Management Teaching Restaurant and the Southern Wine & Spirits Beverage Management Center. Going into its 10th year, the Festival has raised more than $12 million for the School.
The 2010 Food Network South Beach Wine & Food Festival presented by Food & Wine welcomed over 50,000 wine and food lovers and paid respects to Daniel Boulud at its annual Tribute Dinner. 2010 was another banner year as the Festival raised more than $2.2 million for beneficiary, FIU’s School of Hospitality and Tourism Management and garnered more than two billion media impressions.

Travel with the lady—married for love by Napoleon (his later affairs notwithstanding) and renowned for her beauty, intelligence, elegance, and fashion sense—as you dine in style: first, in the City of Lights, with a Parisian appetizer and aperitif; then in Bordeaux, where a brilliant wine will accent your second plate; thirdly in Eugénie-les-Bains, a spa-resort town named for the empress and home to some of southwestern France’s best wines; and, finally, in Biarritz, where dessert and a digestif will end your trip on a high note.
Helping to recapture the splendor of the original adventure will be the celebrated Chef Philippe Ruiz of the Biltmore Hotel and two masters who today continue the same traditions that impressed the empress more than 150 years ago: Chef Pascal Nibaudeau from Le Pressoir d’Argent at the Regent Grand Hotel Bordeaux, which in 2010 earned a coveted Michelin star; and Chef Jean-Marie Gautier from Le Villa Eugenie at the Hôtel du Palais in Biarritz, which likewise has earned a Michelin star and countless other distinctions. Offered at one of Coral Gables’ most admired addresses, don’t miss this lovely excursion.
The wines chosen to accompany this sumptuous Tour de France will originate from acclaimed châteauxs in France’s most prestigious wine region, Bordeaux. You’ll start with the dry white wine of Château Suduiraut, “S” de Suduiraut and then proceed to taste two highly acclaimed red wine producers including the famed Grand Cru Classé Château Pichon-Longueville, Baron de Longueville, and then finish on a sweet note with the celebrated Sauternes of Château Suduiraut, Grand Cru Classé. Christian Seely, Managing Director of AXA will give a brief introduction about each wine and answer any questions.

Challengers from all over the country will descend on South Beach to create the Next Classic Cocktail using 4 Orange Premium Vodka, the only vodka made from pure Florida oranges. An expert tasting panel will review the cocktails and judge them based on appearance, aroma, taste and overall impression. The person who can ‘squeeze’ out the win will receive $3,000, a trophy and certificate, and the title of "4 Orange Vodka U.S. Champion 2011.”

With the release of the 1974 Insignia, Joseph Phelps Vineyards became the first California winery to blend the traditional Bordeaux grape varieties under a proprietary label. The name Insignia was selected to represent the finest lots available from each vintage, and to emphasize the importance of blending over varietal designation as a determinant of quality. After many years of developing vineyards in Napa Valley’s premium growing regions, the 2004 vintage marked the first Insignia crafted from 100% estate-grown fruit. This six-vintage retrospective tasting will begin with 2002 Insignia, named “Wine of the Year” by Wine Spectator in 2005, and conclude with 2007 Insignia which was given a 96 rating by Wine Spectator . A Who’s Who of chefs will turn out for a gala dinner orchestrated in honor of one of the world’s most revered culinary masters and emceed by actress and winemaker Carole Bouquet. The legendary Alain Ducasse, who cooked at the Festival’s very first Tribute Dinner in 2002, will take a seat at the head table ten years later as his esteemed colleagues and peers in the culinary world prepare a meal in homage to his powerful and far-reaching influence on contemporary cooking and dining. Born on a farm in southwestern France, Mr. Ducasse began his career at just sixteen and today holds the distinction of having earned more Michelin Stars than any other chef in the world, a total of 19. A master of Provencal cooking methods, which he has elevated and promoted through cooking schools, cookbooks, and his more than two dozen restaurants, the innovative chef continues to seek new challenges. His newest restaurant, on the Caribbean island of Vieques, features a menu built around the native street food and cooking traditions, all of it served with a side of creativity compliments of Ché Ducasse.
The enchanting hostess for the evening is French actress and model Carole Bouquet. The Neuilly-sur-Seine, France native has appeared in more than 40 films and served as a model for Chanel in the 1990s. She is best known internationally for her role as the Bond girl, Melina Havelock, in the 1981 movie For Your Eyes Only. Carole’s exquisite elegance will supplement the extraordinary aroma that will flitter throughout the evening for Alain. Carole is also a successful winemaker with two variatels, a 2001 dessert wine called Passito di Pantelleria and La Croix de Peyrolie 2002, a Bordeaux red from Lussac-St.-Emilion. Both wines made their American debut at Alain’s Essex House and Mix restaurants in New York City.
Tonight, it will be Mr. Ducasse’s turn to luxuriate in the genius of others as he accepts dishes of the highest caliber from the many who have learned from and worked with him. Take your place on this glorious night of toasts and praises, when all assembled will raise glasses of the finest wines to salute one of the many giants whose skill, exacting standards, and adventurous spirit have given rise to a unqiue, robust cuisine all his own and brought pleasure to countless many the world over.
This tribute dinner will feature the dishes of some of the world’s most renowned chefs, each of whom will personally oversee the cooking and preparation of his or her appointed course. These chefs will be responsible for every aspect of the food served, and the meal will embody the quality expect of the finest three-star restaurants. This is a once-in-a-lifetime opportunity to partake of the creations of multiple chefs whose restaurants span the globe and who likely will never contribute again to a single meal of this caliber. It is recreated each year by taking the art of blending to another dimension with over 170 wines spanning 10 different Vintages, which then age for at least six years. At Michael’s Genuine Executive Chef Michael Schwartz will team up with Iron Chef Michael Symon, also the 2010 Amstel Light Burger Bash champion. At Sra. Martinez, Chef Michelle Bernstein will welcome John Besh from Restaurant August into her kitchen. Over at Fratelli Lyon, Ken Lyon will share the chopping board with Andrew Carmellini from Locanda Verde in NYC.
For starters, you’ll enjoy a reception at which all diners gather together for passed hors d’oeuvres on the outdoor patio at Vino & Olio. From there, you’ll join one of three groups as you make your rotation from one restaurant to the next, each of which will serve you one course of your evening’s meal, along with a different wine pairing at each location.
At the conclusion of your third course, everyone will meet at Ornare for a dessert finale, where your biggest chore will be to choose from the dozens of assorted sweets on hand for your pleasure. It’s an evening of pure delight in one of Miami’s great neighborhoods.

A retrospective tasting of Chateau Ste. Michelle's Canoe Ridge Estate Wines presented by Winemaker Bob Bertheau and Vineyard Manager Mimi Nye
From a powerful river of lava 12 million years ago to massive floods from the last Ice Age 13,000 years ago, great forces have been at work to carve up the dramatic landscape that is the site of Chateau Ste. Michelle's vineyard at Canoe Ridge Estate. What was once home only to sagebrush and coyotes on this remote, rugged, steep wind-swept slope overlooking the Columbia River, is now the vineyard source of some of the top wines from Washington state. Planted in 1991, Chateau Ste. Michelle's 559-acre Canoe Ridge Estate vineyard has matured into one of the premier vineyards in the state producing wines that have earned "Top 100" status, 90+ scores and numerous accolades. For nearly 20 years vineyard manager Mimi Nye has managed all aspects of the vineyard's development from planting the first vines to controlling all decisions during the growing season, to experimenting with alternative grape varieties, and implementing the latest viticultural technology.
Together Mimi and winemaker Bob Bertheau believe a truly great glass of wine starts with great fruit in the vineyard.
