2013 FOOD NETWORK SOUTH BEACH WINE & FOOD FESTIVAL
FEBRUARY 21-24, 2013
The Food Network South Beach Wine & Food Festival presented by FOOD & WINE is a national, star-studded, four-day destination event showcasing the talents of the world’s most renowned wine and spirits producers, chefs and culinary personalities. Hosted by Southern Wine & Spirits of Florida and Florida International University (FIU), the Festival benefits FIU’s Chaplin School of Hospitality and Tourism Management and the Southern Wine & Spirits Beverage Management Center. Going into its 12th year, the Festival has raised approximately $17 million to date for FIU.
In 2012, more than 60,000 guests attended nearly 50 events featuring more than 150 celebrated chefs and over 250 wineries, spirits producers, and non-alcoholic beverage suppliers. The Festival is made possible by more than 1,000 FIU students thru its Student Associate Program.

For the authentic San Fran experience, Far Niente Winery will pour varietals of its Napa produced Cabernet & Chardonnay. Host Michael Mina will prepare a course from his namesake restaurant, a former two-Michelin-star eatery located several blocks from SF’s Embarcadero wharf. Joining him in the Fog City’s makeshift east coast kitchens and each preparing a course are Tyler Florence, Richard Reddington and Thomas McNaughton. After the meal, Cigar Aficionado magazine is sponsoring a special cigar bar on the gorgeous pool deck.

Join CNN’s Anthony Bourdain for a screening of “Jiro Dreams of Sushi”, the story of 85-year-old Jiro Ono, considered by many to be the world’s greatest sushi chef. After the movie, a delicious sushi and sake reception with sushi provided by Katsuya by Starck will enterian guests as Bourdain answers questions about the film.
The film closely examines the restaurant that Jiro Ono operates--a 10-seat, sushi-only diner located in a Tokyo subway station. Despite its humble appearances, it is the first restaurant of its kind to be awarded a prestigious three-star Michelin Guide rating, and sushi lovers from around the globe make repeated pilgrimage, calling months in advance and shelling out top dollar for a coveted seat at Jiro’s sushi bar.
The film originally premiered in the Tribeca Film Festival and was directed by David Gelb.

Champagne Perrier-Jouet
Since its beginning in 1811, much remains the same at the House of Perrier-Jouët. Born from a passionate affair between Pierrer Nicolas Perrier and Adèle Jouët, the house’s artistic, rarefied, ethereal, pleasure-loving spirit has infused every vintage produced by the company from the very first to the most recent. Such a spirit is perhaps best epitomized by the anemone design on the bottle created by master glassmaker Emile Gallé, the legendary leading artist of the Art Nouveau movement.
Over the past two hundred years, a line of only seven Chef de Cave have shared a single goal, which is to delight the senses with the superb grape, and do display its depth and complexity. A Vertical Tasting of Vintage Amarones from the Bertani Estate
Experience an extraordinary tasting of six rare and historic vintage Amarones from the cellars of the world-famous Bertani estate. This remarkable property was founded over 150 years ago by brothers Gaetano and Giovan Battista Bertani. Collectors and connoisseurs the world over recognize Bertani as the preeminent producer of Amarone, the legendary red from the vineyards of the Veneto in northeast Italy. Over the decades Bertani has led the way in forging an international reputation for Amarone, whose skillful vinification illustrates Italian winemaking at its best. Few producers age their Amarone as long as Bertani, whose harvest originates entirely in the firm’s extensive estate vineyards. Headquartered at the palatial Villa Novare near Verona, Bertani is a treasure trove of vintage Amarone and Recioto wines. Underground cellars at Bertani’s nearby Grezzana property provide ideal conditions for storing fragile older vintages.

What do oysters and wines have in common? Complex flavors, the Old World and the New, cultural touchstones, aphrodisia, and a connection between taste and place. In wine, textures and flavors that come from specific growing regions is called terroir. For bivalve aficionados, merroir is the equivalent concept, one that our experts from Island Creek and USHG will explore thoroughly in this class. Nobuyuki "Nobu" Matsuhisa (松久 信幸) is a celebrity chef and restaurateur known for his fusion cuisine blending traditional Japanese dishes with South American ingredients. Nobu owns and operates 35 restaurants worldwide. He became a sensation with movie stars and celebrities when he opened his first restaurant Matsuhisa in Beverly Hills in 1987. Shortly after, Nobu partnered with Robert DeNiro for a location in Tribeca, which became the critical anchor to his fledgling worldwide success.
Christophe Navarre is the Chief Executive Officer of Moët Hennessy. He joined Louis Vuitton Moët Hennessy in 1997 as President and CEO of JAS Hennessy & Co, building the company’s world leadership in the cognac industry. In 2001 he was appointed CEO of Moët Hennessy, the Wines and Spirits division of LVMH. He is also a board member of the Comité Colbert and a member of the Heineken Advisory Board as well as Chevalier of the French Legion of Honor, a Commandeur de l’Ordre du Mérite Agricole and an Officier de l’Ordre de la Couronne in Belgium.
This tribute dinner will feature the dishes of some of the world’s most renowned chefs, each of whom will personally oversee the cooking and preparation of his or her appointed course. These chefs will be responsible for every aspect of the food served, and the meal will embody the quality expected of the finest three-star restaurants. This is a once-in-a-lifetime opportunity to partake of the creations of multiple chefs whose restaurants span the globe and who likely will never contribute again to a single meal of this caliber. Chefs scheduled to prepare a course are: Daniel Boulud, Thomas Buckley, Frederic Delaire, Ricky Estrellado, Matt Hoyle, Johnny Iuzzini, Yoshihiro Murata, Yuji Wakiya and Roy Yamaguchi.

Cloudy Bay Sauvignon Blanc - An Evolution of Two Styles
Cloudy Bay Vineyards was established in 1985 by Cape Mentelle, the Western Australian winery, which today is a part of the Moët Hennessy Wine Estates.
The company farms 140 hectares of vines at three carefully selected sites. Vineyards planted in 1986 surround the winery in the Wairau Valley at Rapaura, with additional plantings at nearby Renwick and in the Brancott Valley, in the southern foothills. Five long term contract growers also work closely with Cloudy Bay.
The main varieties grown are Sauvignon Blanc, Chardonnay and Pinot Noir with lesser quantities of Riesling and Gewurztraminer. The average annual crush is 1200 tons.

Numanthia: A Century in a Glass. Discovering the Icon of Toro
Bodega Numanthia was founded in 1998 by the Eguren familly to produce the best wine from Toro. The estate is located in Valdefinjas, a small village of Toro in Northwest Spain. The wines have delighted critics since the first harvest. Key to the success is the production and selection of the best grapes from Toro. Grapes from low-yielding old vines are hand-picked at optimal ripeness when they are intensely fruity and concentrated. Winemaking then focuses on extracting the full potential, particularly the intense fruit flavors typical of Tinta de Toro, as well as structure and elegance.

Chef Cindy Hutson along with her partner Delius Shirley from Ortanique on the Mile in Coral Gables, will showcase their Cuisine of the Sun by Ortinique using the Coco’Mon™ Oil and hempseeds while preparing native Rastafarian dishes like patties, fritters, I-tal, Toto and Blue Drawers and MUCH MORE! Cindy and Delius have invited two friends from Jamaica to prepare additional bites for the night. Chef Ana Kaye Tomlinson from "Miss T's kitchen" will be doing fantastic simple vegan items while Gari Ferguson the Chef / Owner at G's Que will so authentically prepare pigs, chickens and jerk on the grill that you’ll think you’ve been whisked away to Kingston.
Ziggy is the son of Jamaican Legend Bob Marley. He will play his tunes and reminisce to the ‘Good Old Days’ with jams from his late father’s albums as well. It’s the perfect way to say goodbye to Miami’s favorite weekend, and start the countdown until the chefs invade the beach once more.
