2015 FOOD NETWORK & COOKING CHANNEL SOUTH BEACH WINE & FOOD FESTIVAL
FEBRUARY 19-22, 2015
Having just celebrated its 13th year, the Food Network & Cooking Channel South Beach Wine & Food Festival presented by FOOD & WINE began as a one-day festival known as the Florida Extravaganza held at FIU’s Biscayne Bay Campus. For five years, from 1997-2001, the Florida Extravaganza showcased wines from national and international wineries paired with food from local restaurants and chefs working with students of FIU’s School of Hospitality & Tourism Management. In 2002, Lee Brian Schrager, then director of Special Events & Media Relations at Southern Wine & Spirits of America, took the reigns of the one-day festival and brought his vision for the Festival to life by relocating it to South Beach. The renamed South Beach Wine & Food Festival® attracted close to 7,000 guests to a series of dinners, seminars, a Grand Tasting Village and live Auction in its first year.

We’ve enlisted the help of one of the world’s foremost mixologist, Francesco Lafranconi, to curate an evening of Polynesian flare with tiki-inspired cocktails from across the country. He’s rounded up some the best bartenders from highly regarded tiki-inspired joints across the country as they compete to be crowned tiki-King at the end of the night. Francesco, who also serves as Executive Director of Mixology and Spirits Educator for Southern Wine & Spirits of Nevada, will team up with SOBEWFF veteran and culinary royalty Emeril Lagasse for this unique event. Who better to host this "taste of the tropics" than Lagasse, a celebrated chef, restaurateur, television personality and author and Festival friends. An esteemed panel of judges will evaluate the contestants’ rum-centric offerings, while you sample all of the creations and enjoy light Polynesian-inspired bites. From Don the Beachcomber (both the man and the restaurant) to Trader Vic’s to every place and symbol in between, tiki is more than a drink, its a subculture enjoying a resurgence in popularity with bartenders across America and we’re bringing it back to the beach -- to South Beach!

When it comes to cooking, no one is perfect. Not even Dana Cowin, Food & Wine's Editor in Chief. And although Dana is an accomplished host and capable cook, she has bungled many a recipe, an experience she documents in her new book mastering My Mistakes in the Kitchen. Join her as she bravely discusses her culinary misadventures with a panel of star chefs. During this hour they'll talk about their most tragic and comedic kitchen catastrophes and reveal the ways they've turned potentially disastrous mess-ups into triumphs. Dana and her panelists will also talk about failure and success in broader terms and reveal how they have confronted setbacks in both their personal and professional lives.

Chardonnay - arguably the worlds' most famous grape is a chameleon grown the world-over; a perfect vehicle to express terroir, providing a window into where it is grown. The homeland of Chardonnay, France is also home to the regions of Burgundy and Champagne - where the grape shines brightest.
Join Thomas Henriot, whose family firm Maisons & Domaines Henriot controls both the Burgundy house Bouchard Père & Fils & Champagne Henriot, for a Chardonnay lovers' dream as we taste through the ultimate expression of Chardonnay. From the famous, historic vineyards of the Côte-d'Or to the Chardonnay-driven blends from the Côte des Blancs. The Henriot family story began in 1808 with the founding of Champagne Henriot, today it continues with their celebrated triumphs in both Burgundy and Chablis with Bouchard Père & Fils, William Fèvre and Villa Ponciago.
Featured Wines:

- Bouchard Père & Fils Beaune Clos Saint Landry 2012

Ferrari-Carano: Savor the Difference
Join us for a special tasting of six different California Chardonnays from the extraordinary 2012 vintage. Sip and savor the distinct difference between our Sonoma County Chardonnay and our Reserve Chardonnay from Napa Valley Carneros. You’ll also taste the Tré Terre Chardonnay from Russian River Valley, along with three delicious, limited-release Chardonnays affectionately dubbed “the girls” from Russian River Valley, Dominique, Emelia’s Cuvée and Fiorella.
Russian River Valley is known for producing some of the world’s best Chardonnays, and the 2012 vintage did not disappoint. A good year with ideal weather conditions for the vines, the spring of 2012 produced great set and average rainfall that led to normal and above normal yields. Consistently warm temperatures during the summer months without any major heat spikes or rain events allowed for longer “hang time” for the grapes, which led to full, ripe flavors – ideal for our Chardonnays.
Featured Wines:
- 2012 Ferrari-Carano Sonoma County Chardonnay
- 2012 Ferrari-Carano Tre Terre Chardonnay, Russian River Valley
- 2012 Ferrari-Carano, Napa Valley Carneros, Chardonnay Reserve
- 2012 Ferrari-Carano Dominque Chardonnay, Russian River Valley
- 2012 Ferrari-Carano Emilia's Cuvee Chardonnay, Russian River Valley
- 2012 Ferrari-Carano Fiorella Chardonnay, Russian River Valley
A vertical tasting of Mastrojanni's flagship wine, Brunello di Montalcino
The Mastrojanni Farm is located in the province of Siena, at the farthest southeastern edge of the municipality of Montalcino, in the hillside town of Castelnuovo dell’Abate. The estate was established in 1975 by the Mastrojanni family during a time when there was only but a handful of producers in the region on what were the ruins of a half-abandoned small village.
Over the years, Mastrojanni has become recognized as one of the top producers in the Montalcino region. The wines are known and admired for their classic, rich, terroir-driven character and proven ability to age elegantly due to a confluence of remarkable factors both in and out of the vineyards.
In 2008, the Mastrojanni Farm chose the Illy family and joined Gruppo illy, thus guaranteeing that the continuity of the wines and their exceptional level of quality would be maintained.
Featured Wines:
- 2001 Mastrojanni Brunello di Montalcino DOCG
- 2003 Mastrojanni Brunello di Montalcino DOCG
- 2004 Mastrojanni Brunello di Montalcino DOCG

The Festival’s host hotel Loews Miami Beach is proud to once again host the annual Tribute Dinner. This year, we are pleased to pay tribute to Chef Juan Mari Arzak, the acclaimed pioneer of Basque cuisine, and Ted Baseler, president and CEO of Ste. Michelle Wine Estates. Harold McGee, food scientist, author and contributor to The New York Times, will serve as the evening’s emcee. Known as the ‘curious cook’, McGee’s unique ability to fuse the worlds of food and science together is sure to bring a charming element to the evening. Joining McGee is Tribute Dinner Culinary Chairman, celebrated Spanish chef Jose Andres, a long-time close friend of Arzak.
This exquisite evening will feature the highest quality dishes prepared by chefs from around the world who have been influenced by Arzak; which will be paired with the finest wines from the Ste. Michelle Wine Estates portfolio. Participating chefs include:
- Andoni Aduriz out of San Sebastian, whose restaurant Mugaritz was ranked number six by The World's 50 Best Restaurants in 2014
- Jose Andres, Tribute Dinner Culinary Chairman, James Beard Award-winning chef and recognized by Time magazine on the “Time 100” list of most influential people in the world
- Alex Atala out of Sao Paulo, whose restaurant D.O.M. (Deo Optimus Maximus) is currently ranked number seven by The World's 50 Best Restaurants, in 2014
- Quique Dacosta out of Alicante, who's eponymous restaurant on the Costa Blanca recently received it's third Michelin star
- Loews Miami Beach’s own Frederic Delaire
Arzak was born in San Sebastian in 1942 and graduated from the School of Hospitality in Madrid. In 1989, his family’s namesake restaurant received three stars in the prestigious Michelin Guide. Amongst a slew of awards, Arzak has been included in the top ten of the World’s 50 Best Restaurants list since 2006, and received a Lifetime Achievement Award from the organization in 2011. He is recognized for spearheading the Nueva Cocina Vasca (New Basque Cuisine) movement that laid the groundwork for a larger Spanish culinary revolution. In 1970, Arzak developed a scorpion fish dish - called kabrarroka - that served as the tipping point for his career, a creation that emulates his playful and innovative approach that holds true to present day. As he told Wall Street Journal magazine in 2013, "If it isn't fun," he says, "what is the point? I've never eaten and not had fun."
Ste. Michelle Wine Estates is the third largest premium wine company in the U.S. Baseler began his career at Ste. Michelle in 1984 as director of marketing and was offered ever-increasing levels of responsibility, eventually becoming chief operating officer before being named president and CEO in 2001. His focus on building a high quality portfolio has resulted in wines lauded by critics, including Wine Spectator’s coveted No. 1 Wine in the World title in 2009. In 2013, he was named by his peers to Vineyard & Winery Management’s list of “20 Most Admired People in the North American Wine Industry.”
Past Festival honorees include Chuck Wagner, Danny Meyer, the Robert Mondavi Family, Ferran Adrià, Eric Ripert, Jean-Georges Vongerichten, Emeril Lagasse, Daniel Boulud, Alain Ducasse, Charlie Trotter, Marchese Piero Antinori, Mr. and Mrs. José Ferrer Sala, Christophe Navarre, Alice Waters, Jamie Oliver and Martha Stewart.

“Blending The Rules” featuring JUSTIN & Landmark Vineyards
Play winemaker for the day in our seminar and create your own blend. Experiment with all the blending components of a wine, then taste and compare your blend with our current vintage. This seminar will feature JUSTIN’s flagship wine ISOSCELES and Landmark Vineyards’ signature wine, the Overlook Chardonnay. Each blending experiment will take you through the varieties and characteristics of all the different vineyards that make up each wine.
Featured Wines:
· Landmark Vineyards Overlook Chardonnay
· Justin Isosceles
Background Information:
Rooted in California’s winemaking history, JUSTIN and Landmark were founded over 30 years ago and are widely considered a staple in their respective regions.
Both wineries have each received top honors for their wines by appearing on Wine Spectator’s Top 100 list and have garnered praise from some of the toughest critics.
In 1981, Justin Baldwin purchased a 160 acre parcel of land in the mountains west of Paso Robles. Immediately he planted three of the five principal Bordeaux grape varieties: cabernet sauvignon, cabernet franc and merlot. More than 30 years later, JUSTIN is widely recognized for putting Paso Robles winemaking on the map and for their iconic ISOSCELES Bordeaux blend.
Since 1974, Landmark has been dedicated to producing handcrafted, ultra-premium Chardonnay and Pinot Noir sourcing grapes from unique vineyard sites throughout California to create rich, balanced wines. Their signature wine, the Overlook Chardonnay, has appeared on The Wine Spectator Top 100 list seven times.

Tour of Southern Italy with Valentino Sciotti of Farnese Group
Join Valentino Sciotti for a tour of your senses. He will lead you on a delicious journey through the most beautiful regions of Southern Italy: Abruzzo, Basilicata, Sicily and Puglia. The name Farnese is one of Italy’s most illustrious. In Renaissance times, this noble family’s wines made scintillating appearances on the banquet tables of numerous European courts thanks to Princess Marguerite Farnese (née Marguerite of Austria, an Emperor’s daughter). In gratitude to the Farneses, successive owners maintained the ancient name on local labels.
Farnese wines, encompassing an ample range of terroirs and microclimates throughout many regions in Southern Italy. Joint owners, Valentino Sciotti and the late Camillo de Iuliis, describe the Farnese philosophy in two words: Progetto Qualità, which is a stringent series of quality criteria that provides the framework of every single stage in the process from vineyard to bottle. No one on the Farnese team, no matter how small his role in the total picture, can stray from these demanding standards. The team itself comprises a large group of young, dynamic wine professionals many of of whom had worked for some of the top wineries in France and southern Italy.” These winemakers are led by Filippo Baccalaro and enologist Jeanmarc Sauboua and Alberto Antonini – not to mention top-notch agronomists like Remo di Giuliantonio. Research and development go side by side with this impressive quality set-up so they can preserve the rich history and tradition of southern Italian varietals while ensuring the wine is perfect for every person who enjoys a bottle.

The Jarvis Estate difference and why does "Estate" matter?
The Jarvis Estate winery in Napa Valley was founded with two related concepts in mind. The first was using only grapes grown on the property to make world class wines. The second was to remove as many outside variables as possible and control the process from grape to delivery of the wine to the consumer.
The Estate model, coupled with our unique hillside location have allowed us to make a consistent style of wine that perfectly shows the influence of place for the past 23 years. The process handling all inputs then guarantees that outside factors do not put the wines at risk. This seminar will go over what makes Jarvis Estate different and the proof is in the tasting of the wines.
Featured Wines:
· 2012 Finch Hollow Chardonnay
2010 Cabernet Franc
2010 Reserve Merlot
2009 Cabernet Sauvignon
2008 Lake William
2006 Reserve Cabernet Sauvignon
