In a unique and fascinating wine glass tasting, Anne Koziara, Vice President of On Premise Sales, will demonstrate the relationship between the shape of a glass and our perception and enjoyment of wines. To fully appreciate the personality of different grape varietals and the subtle character of wines, it is essential to have an appropriately fine tuned glass shape. The shape is responsible for the flow of the wine and consequently where it touches the various taste zones of the tongue. The initial point of contact depends on the shape and volume of the glass, the diameter of the rim, and its finish (whether it is cut and polished or rolled edge) as well as the thickness of the crystal. As you put your wine glass to your lips, your taste buds are on alert. Once the tongue is in contact with the wine, three messages are transmitted at the same time: temperature, texture and taste. Wine is composed of different elements: fruit, acidity, mineral components, tannin and alcohol. The combination between the sense of smell and taste leads into the wonderful world of flavour. It is the glass shape which is responsible for balance and harmony of flavors. In 1962, Castello di Monsanto was established by Fabrizio Bianchi. Located in the heart of the Chianti Classico denomination in the province of Florence, the estate is known as one of the finest jewels of the Chianti Classico zone. Join winemaker, Andrea Felluga, in a four-vintage vertical tasting of one of Italy's most show-stopping wines: The Livio Felluga Terre Alte. Located in Friuli, Italy, Livio Felluga established the winery in 1956 and the winery has been family-operated since its inception. Today it is managed by the children of Livio Felluga.

The Livio Felluga winery is known for their iconic map label, which depicts the terrain of Friuli. Their most famous wine, Terre Alte was first introduced in 1981. It is an innovative blend of estate-grown Friulano, Pinot Bianco and Sauvignon grapes from estate vineyards in the Rosazzo zone. For Friuli, a region loyal to varietal wines, Terre Alte marked a new and intriguing beginning. It is a wine that radically revolutionized the philosophy of wine production, not only in Italy, but also in the world.

Livio Felluga's Terre Alte is consistently represented in all of the Wine Spectator tastings, including the Grand Tour, the Wine Experience and their newest addition, Opera Wine, which takes place in Verona, Italy and highlights only the 100 best Italian wineries.

This vertical tasting will truly be a unique opportunity, as older vintages of Terre Alte are extremely limited in production. The tasting will highlight the development and most optimal harvests of this wine.

Reigning Goya Foods’ People’s Choice Award-winner for best whole roasted pig, Cindy Hutson returns to the Biltmore, Coral Gables, as she rounds up some of her fellow colleagues to take this swine-centric affair to a whole new level. This year, Goya Foods and the National Pork Board, the Official Pork Sponsor and Preferred Protein of the Festival, will delight with professional pig roasters who will develop their own pig creations and a large variety of amazingly delicious sides. They will use their secret arsenal of special spice blends to make your taste buds dance with their treatment of all-natural, farm-raised, exceptionally tender pork, and delight swine lovers with creative pig-centric tapas, served inside the Biltmore Hotel Club Ballroom. At the same time, in the beautiful Courtyard, slow roasting whole pigs will render mouth-watering meat being served straight from each chef's own caja china and other inventive devices. All chefs will compete for the coveted People’s Choice Award, and this year, professional judges will cast their Foodie Awards as well. And for the “sweet-toothers”, the Biltmore Hotel will feature its own “Sweet Zone” showcasing the creations of experienced pastry chefs and ice cream makers. All these amazing savory samplings will be accompanied by wines from Folonari, La Linda and Luigi Bosca, as well as cocktails from Pig’s Nose Scotch Whisky, Tito’s Handmade Vodka, and Zafra Rum. Up-beat tunes and live entertainment by El Tucán Cabaret & Modern Day Lounge will cap off this celebration of swine.

For the second time, we’ve tapped good friend and James Beard Award-winning TV personality, chef, food writer and teacher, who is widely regarded as one of the most versatile, knowledgeable and “bizarre” personalities in the food world, Andrew Zimmern to host the occasion. Dance the night away to beats from live entertainment presented by Menin Hospitality, including Miami-based acoustic pop-rock artist Carly Jo Jackson, and enjoy interactive games brought to you by Ricky's. Fill up to the brim with sushi, dumplings, dim sum and a variety of other unique eats while sipping on special libations paired specially for these flavorful bites.
