And like society as a whole, it's not business as usual anymore, not should it be. Attitudes have shifted. Lines have been drawn. And in the words of Bob Dylan, "times, they are a changing." So, where do we go from here? How do we move forward and build stronger companies, implement essential policies, and above all else, take care of the people who take care of us and our guests? How do we create a positive, thriving, and healthy culture in and out of our restaurants?  How do we do what should be the most basic thing in society - surround ourselves with "good" people? Led by Kat Kinsman, editor of Extra Crispy and former CNN Eatocracy Editor, some of the most innovative and progressive chefs and restaurateurs in the country get together to discuss how they're adapting and leading the conversation. With over 200 hectares of vineyards in the most suitable areas of the Verona province, today Bertani is a solid winery with a constantly increasing distribution in Europe and the rest of the world. There are two historic wineries, one in Grezzana, the current base and pulsing heart of the company, where vinification, bottling and shipment are carried out, and Tenuta Novare in Arbizzano di Negrar, in the heart of the Valpolicella Classica area, the cradle of great reds like Amarone and Valpolicella Classico Superiore. As an icon of Italian wine in the world, Bertani combines typicity of native grape varieties with continuous improvement in the vineyards and attention to the terroir. Respect for tradition is balanced by innovation and great business acumen in order to achieve the highest quality: these are the fundamental principles of the winery, today also the reference point for the great national group: Bertani Domains.

Join us in this riveting seminar as Michael Accurso, Goldeneye Winemaker, guides us in exploring terroir-inspired wines that balance depth and power with Pinot Noir’s natural elegance. 2014 Goldeneye Anderson Valley Pinot Noir In 1996, building on the tradition of excellence they established at Duckhorn Vineyards, Dan and Margaret Duckhorn embraced their growing love of Pinot Noir and came to Anderson Valley to found Goldeneye. In the years since, Anderson Valley has earned acclaim as one of the world's greatest regions for Pinot Noir. Crafted predominantly from our estate vineyards and shaped by the influence of the wind, water and fog, this wine embodies both the elegance of Anderson Valley Pinot Noir, and its deep, rustic beauty. 2014 Goldeneye Gowan Creek Vineyard Estate Grown Pinot Noir Two miles north of the Confluence Vineyard in the heart of the Anderson Valley, our Gowan Creek Vineyard sees appreciably more coastal fog. The unique terroir of this site brings together elements from both the valley’s warmer regions and its cooler, northern “deep end.” Offering an ideal Southwestern exposure and an array of unique vineyard blocks, Gowan Creek is planted to eight different clones of Pinot Noir, each carefully tailored to a specific site and soil type. The powerful and expressive wine produced from these vines displays beautiful inky depth and robust, untamed fruit flavors. 2014 Goldeneye Ten Degrees Estate Grown Pinot Noir The name Ten Degrees pays homage to the unique, cool climate of the Anderson Valley and the fact that even though our four estate vineyards span a modest eight miles, they often display a temperature variance of as much as 10 degrees from The Narrows Vineyard in the cool “deep end” to our Confluence Vineyard in the south. To add to this natural climactic diversity, our Estate program consists of 200 acres and more than 96 individual blocks of Pinot Noir with 49 unique combinations of clone and rootstock material. 2015 Migration Russian River Valley Pinot Noir Since our first vintage in 2001, Migration has developed a refined and compelling style that balances vibrancy and finesse. Defined by the idea of movement, Migration is dedicated to going beyond our Anderson Valley origins and exploring Pinot Noir and Chardonnay from the finest cool-climate winegrowing regions. This exploration has taken us to the storied vineyards of California’s Russian River Valley, where clockwork fog and Goldridge sandy loam soils have contributed to a Pinot Noir with beautiful, high-tone red fruit flavors of strawberry, cherry and cranberry and enticing hints of orange-cinnamon spice.

Renowned chefs Alon Shaya, James Beard Award-winning chef whose namesake restaurant in New Orleans was named “Best Restaurant in America” in 2015 by Esquire, and Ingrid Hoffmann, popular Colombian-American television personality and cookbook author, join forces to bring you a heritage food experience unlike any other at the Broward Center for the Performing Arts. This family-style dinner will be prepared by women representing two organizations dedicated to supporting Syrian refugees - the Denver-based Comal Heritage Food Incubator and Miami-based Zaytouna and Syrian Supper Club. Following a “learning while earning” model, Comal offers job training, culinary arts and language education for its classes of aspiring entrepreneurs while they work to serve up authentic, multicultural dishes at its lunchtime spot Comal Kitchen in Denver. Similarly, Miami’s Syrian Supper Club has been giving South Floridians the opportunity to explore the rich cultural traditions of Syria for years now. They have expanded with the creation of its business enterprise arm, Zaytouna (the Arab word for “olive branch”), to offer refugees the opportunity for permanent employment and development of a packaged foods line. The first pages of the Maison MUMM fabled winemaking history were written long before 1827, its official founding date; the Mumm family, whose lineage includes barons and knights, dates back to the 12th century. Already in 1761, the family had launched a business as wine producers and merchants based in Cologne, Germany under the name “P.A.Mumm”, after its owner Peter Arnold Mumm. The company owned large vineyards in the Rhine valley, where it created its own wines. In the early years of the 19th century, Peter Arnold Mumm's three sons, Gottlieb, Jacobus and Philipp, recognised the sales potential of the outstanding sparkling wines produced in the Champagne region of France. As Germany and France enjoyed good relations at the time, the Mumm brothers made the bold decision to establish a new branch of the family company in the Champagne region, creating a branch office in Reims with the assistance of a local representative, G.Heuser. From the outset, quality was the key watchword for the partners in this new entity formed in 1827, and it has remained so for all of their successors. This approach would be encapsulated in the motto penned by Georges Hermann Mumm: "Only the best". In this seminar, we will explore nearly 200 years of history as we taste through the ‘Champagne of Kings’. Since 1827, the mantra of Maison G.H. Mumm has been ‘Only The Best’, and we intend to share the fruits of our labor.

The house of Pascal Jolivet was founded in 1987 and is one of the most dynamic domains in France’s Loire Valley. Based in Sancerre, the domaine now owns over 120 acres of prime vineyards spread across the appellations of Sancerre and Pouilly-Fumé. The domaine supplements the estate holdings with additional fruit sourced from some of the prime terroirs of the region including “les Caillotes”, “le Chêne Marchand”, “les Terres Blanches”, “les Griottes”, and “le Clos du Roy”.

Sancerre wines originate from three soil types: clay, limestone and flint. The wines are more floral and elegant than wines of the same varietal type in other regions. Pascal Jolivet is a firm believer in natural winemaking and practices environmentally friendly techniques in both the vineyard and the cellar. The philosophy of the estate is to let nature take its course as much as possible. The juices are fermented with wild yeasts in stainless steel tanks with thermoregulation. Valentina Buoso is Pascal Jolivet’s new winemaker and she continues to fulfill Pascal Jolivet’s philosophy and practices.

Pio Cesare has been producing wines for more than 100 years and through five generations. The tradition began in 1881, when Pio Cesare started gathering grapes in his vineyards and purchasing those of some selected and reliable farmers in the hills of Barolo and Barbaresco districts. At Pio Cesare, there has always been a conviction that great wine can come only from the finest grapes and the winery's output has always been limited through adherence to the highest standards. Pio Cesare limits its production by using only the most mature and healthy grapes. The ripening of the grapes is carefully monitored and the harvest is rigidly controlled with each grape selected by hand. Today, the estate is managed by Pio Boffa, great-grandson of Pio Cesare. Under his stewardship, the wines of Pio Cesare have become famous throughout the world. Great strides have been made in quality, and single vineyard offerings have dazzled the wine press.

Louis-Fabrice Latour, the 11th generation of his family to run Maison Louis Latour, will go into detail about the climates on the hill of Corton. While listening to his remarks on the original birthplace of Maison Louis Latour, the guest will be able to taste four different Corton Grand Cru’s, from 2015 and 2010. This opportunity to pair the winemaker’s description of the appellation while tasting the direct product of the hill of Corton, is a once in a lifetime experience. The hill itself is shared between three villages, Aloxe-Corton, Pernand-Vergelesses and Ladoix in the Côte de Beaune, Burgundy. The vines on the hill of Corton are managed in the traditional way by the Louis Latour team which carries out strict pruning in order to produce later harvests thus insuring a good degree of maturity in the grapes. Maison Louis Latour practices sustainable agriculture with respect to a complex philosophy based upon two fundamental principles – experience and observation. We have never compromised our work in the vineyards with techniques that would be more expeditious but more invasive. For example, we use neither insecticides, herbicides nor chemical fertilizers. This all contributes to our efforts in respecting the terroir and protecting the ecosystem. FEATURED WINES:

Vias Imports was born 35 years ago out of the great intuition and vision of founder, Fabrizio Pedrolli, to bring the most traditional and historical wines from Italy to the United States, especially from indigenous and rare grape varieties. The name VIAS comes from the Italian, “Vitigni Italiani Autoctoni Selezionati,” which translates to “Selected Indigenous Italian Grape Varieties” in English. “VIAS Treasures – a Journey Through the Rarest Italian Grape Varieties” will therefore explore the rarest grapes and wines found throughout Italy; a country that is as diverse as the wines that represent it. A vast representation of wines from North to South and everywhere in between will be presented in a way that is educational, informative, and intriguing. This seminar presents the perfect opportunity to honor the philosophy and vision of our founder. If Fabrizio had to imagine his “dream seminar,” this would certainly be it. As education has always been the cornerstone of Vias Imports, this seminar will be the ultimate way to give thanks to Fabrizio for his many teachings over the years.
