Join Gabriele Corcos and Hugo Ortega for an in-depth discussion about alternative proteins and their role in our future eating habits. How can we work to incorporate alternative proteins and “non-Western” ingredients as part of our diets, and how can they help us become more sustainable?  Many cultures around the world have historically embraced entomophagy - insects have been part of certain cultures for centuries, and are regarded as “normal” ingredients in the daily diet. On the other hand, Western cultures have “evolved” their eating habits away from certain food categories throughout history, landing themselves into a sustainability conundrum.  Demand for animal proteins has resulted in excessive co2 emissions and consequent pollution, a progressive degradation of protein quality, “not-anymore-humane” farming practices, and ultimately has sparked a social awakening in both the industry and in the minds of consumers. We will tackle these issues during this panel discussion in an attempt to normalize the conversation between consumers, insect farmers and communication outlets, like print and TV.

The monk that time forgot - port, the rich, sweet, fortified wine that is enjoyed across the world, owes its existence to one monk, forgotten by history, in the remote Douro Valley. It is alleged that two wine merchants in the seventeenth century exploring Portugal’s Douro valley discovered the Abbot of a Lamego monastery adding grape spirit to his wine early on in its fermentation to preserve its sweetness. This was embryonic port. They decided to use this method of ‘fortification’ to preserve their wines for the long sea journey back to England. This wine took its name from the city where these traders had their base: Oporto (Porto), from where it is shipped to the world to this day. Port is still produced in this way, by intentionally interrupting the fermentation of the grape must (or juice) by the addition of a clear grape spirit called aguardente, generally referred to as ‘brandy’. This preserves a large amount of the grapes’ natural sugars, thereby giving port its characteristic sweetness and richness. The grapes that are used to make port must be grown in the mountainous Upper Douro region of Northern Portugal, the world’s first officially demarcated wine region in 1756. This protected region is the only place in the world that can produce authentic port. Join us in this seminar as we explore the world of Graham’s Ports. The Antinori family’s long, storied winemaking history is synonymous with the regions of Tuscany and Umbria, but its passion for innovation led to the discovery of a Napa Valley estate rich with winegrowing potential. The landscape of this beautiful estate, with its rolling hills, greatly recalls Tuscany making it an ideal area for cultivating grapes. Antica represents “Antinori California” and is truly a blend of Italy and California, in both name and winemaking style. Antica is the realization of the family's longstanding desire to produce wines with personality and style in the Napa Valley. The Antinori family’s winegrowing philosophy – to produce wines with passion, patience and perseverance – is expressed fully at Antica Napa Valley. In 1985, the Antinori Family purchased a breathtaking estate located high in the eastern mountains of Napa Valley, 1,800 feet above sea level. The Antinori Family was attracted to this spectacular property, located on a high plateau in the Atlas Peak District, because of its ideal winegrowing potential; its rocky soils, high elevations and spectacular landscape. Today, there are 600 acres of vineyard planted on the estate. The wines of Antica Napa Valley are estate grown and estate produced. Three wines—the Cabernet Sauvignon, Chardonnay and Townsend Vineyard Cabernet Sauvignon—are available in select markets across the US and abroad. The others are designated as Soprattutto wines, which are limited-production estate wines available only from the winery. These include Sangiovese, Pinot Noir, Sauvignon Blanc and a Rosé of Sangiovese, called Fossino. The winery produces a Napa Valley Chardonnay, Cabernet Sauvignon and single-vineyard Townsend Cabernet Sauvignon that are all estate grown and bottled, as well as, several other wines that are only available through the winery. In addition to the Antica Napa Valley Cabernet Sauvignon, Glenn Salva will present two vintages of the Antinori family’s iconic Guado al Tasso Bolgheri DOC Superiore. This is a Cabernet-based wine from Bolgheri, on the Tuscan coast. We will discover how differences in soil, climate and topography impact 3 different Sonoma varieties – Chardonnay, Pinot Noir and Cabernet Sauvignon – grown in the best appellations Sonoma has to offer. 2017 Dutton Ranch, Russian River Valley vs. Sonoma Coast Chardonnay Grown in Goldridge sandy loam soil, the Dutton Ranch Chardonnay is 100% barrel fermented and aged sur lie for 11 months to create a lush wine with flavors of lemon crud, crème brulee and pear. By contrast the Sonoma Coast Chardonnay is grown in a cooler more maritime climate. Winemakers use 50% stainless steel and 50% barrel fermentation to bring out the crisp acidity and flavors of green apple and bright citrus. 2016 Russian River Valley vs. Sonoma Coast Pinot Noir Sourced from several different vineyards, the Russian River Valley Pinot Noir is a blend of the strong minerality and structural backbone from the cooler sites and the complexity and richness from the higher altitude vines. On the other hand, our Patriarch Pinot Noir is sourced entirely from Putnam Vineyard just 6 miles from the Pacific Ocean. Surrounded by redwood trees and dramatically impacted by the coastal climate, this wine shows plenty of richness and finesse. 2014 Cabernet Sauvignon, Alexander Valley vs. Moon Mountain The Alexander Valley is a broad valley floor bisected by the Russian River and surrounded by hills that block the coastal fog. This results in a warm climate which is perfect for growing full-bodied Cabernet Sauvignon with ripe blackberry and plum flavors. Our Tribute, on the other hand, comes from the high-altitude Moon Mountain District in the Mayacamas mountains. With ancient volcanic soils, warm days and cooling breezes, this area produces powerful, intense Cabernet with rich concentrated flavors. Michel Chapoutier is one of the most highly regarded winemakers in France. With his guidance, the family firm has become the benchmark Rhône wine producer. He combines the modern and the traditional: crusading for biodynamic winemaking, while expanding operations around the globe and experimenting with cutting edge winemaking techniques. Today, M. Chapoutier is the only producer to own vineyards in all of the major Rhône appellations. While considered to be one large region, the Rhône is better thought of as divided into two distinct parts – the North and the South. These two parts of the Rhône differ in terms of climate, soil, dominant grape variety, trellising and style of wine. Antonin Bonnet, the winery’s Export Director, will take you on a Tour of M.
