Timon Balloo quickly became one of Miami’s most buzzed-about chefs after bursting onto the culinary scene as the chef/partner of SUGARCANE raw bar grill, the Midtown Miami brasserie that has consistently drawn crowds (both locals and tourists alike) since opening over a decade ago. Unsurprisingly, the James Beard nominee has retained that status with a wide-ranging roster of South Florida restaurants – The Katherine, Mrs. Balloo at the Wharf Fort Lauderdale, the virtual eatery Balloo Wallah, and the now-closed (but affectionately remembered) Balloo. His globally-minded approach and extensive culinary repertoire, which spans from Asian and Indian street food to elevated Caribbean fare – would seem to be the perfect foil for chef and television personality Tiffany Derry. Known for her sensational Southern flavors that are equal parts reverent and redefined, the magnetic “Top Chef” alum is at the helm of Roots Chicken Shak and Roots Southern Table, the latter of which garnered her a coveted James Beard nomination for “Best New Restaurant” in 2022. Join these two culinary dynamos alongside The Bath Club’s Executive Chef, Jeff Masanz for an evening that pays tribute to their rich and rewarding roots.

All net proceeds from the Festival benefit the students of the Florida International University Chaplin School of Hospitality & Tourism Management who assist Festival organizers in all aspects, including Festival planning, logistics and overall execution.
