You can’t live – or even visit – the Magic City without sampling what is arguably one of the city’s greater natural resources. We’re talking about the croqueta, of course – the profoundly satisfying deep-fried delicacy that’s practically a staple in every Miami household. And while the city is home to many excellent interactions of this bite-sized crowd pleaser, very few have generated the kind of cult following that Eileen and Jonathan Andrade’s croquetas have. (Islas Canarias, the restaurant that the chef-siblings’ grandparents started back in 1977, still serves up some of the most insanely delicious croquetas you can find anywhere.) Join the award-winning duo behind Finka Table and Tap, Amelia’s 1931, and Barbakoa by Finka for this interactive master class at The Real Food Academy, where they’ll teach you the magic that goes into making these sacred little cylinders. From traditional Cuban ham to a host of other global influences, the Andrades will prove just how perfect the croqueta is as a vehicle for fully loaded flavor.

 

All net proceeds from the Festival benefit the students of the Florida International University Chaplin School of Hospitality & Tourism Management who assist Festival organizers in all aspects, including Festival planning, logistics and overall execution.
