TASTING NOTES ON SPIRITS
  • AVIATION AMERICAN GIN
AVIATION AMERICAN GIN IS THE WORLD’S HIGHEST RATED GIN (97 POINTS, WINE ENTHUSIAST). AVIATION IS A UNIQUELY AMERICAN TAKE ON GIN – SOFTER, SMOOTHER, AND MORE SUBTLE THAN LONDON DRY GINS. EVERY BOTTLE OF AVIATION GIN IS HANDCRAFTED IN SMALL BATCHES BY A SMALL, DEDICATED TEAM OF MASTER DISTILLERS IN PORTLAND, OREGON.|
  • BALCONES TEXAS POT STILL BOURBON
MADE ENTIRELY GRAIN TO BOTTLE IN WACO, TEXAS, AND IN THE MOST DISTINGUISHED WHISKY DISTILLERY IN THE STATE.  THE FIRST WHISKY DISTILLERY IN TEXAS AFTER PROHIBITION, IT IS A CRAFT DISTILLING PIONEER THAT IS CONSISTENTLY RECOGNIZED AND AWARDED FOR ITS EXCEPTIONAL WHISKY.  BIG FLAVORS HAVE ALWAYS BEEN THE CORNERSTONE OF OUR PRIZED TEXAS WHISKIES, AND TEXAS POT STILL BOURBON IS NO EXCEPTION. USING A TRADITIONAL POT STILL DISTILLATION ENSURES A RICH AND VISCOUS SPIRIT THAT STANDS UP TO AGING IN NEW CHARRED OAK WITHOUT LOSING ITS ESSENCE. EACH DRAM IS FULL OF CHARACTER AND BODY, WITH AN AROMATIC ENTRY AND SOFT FINISH, FOR AN APPROACHABLE YET MEMORABLE EXPERIENCE.
  • IICHIKO SHOCHU
SHOCHU IS THE NATIVE SPIRIT OF JAPAN, A WHITE SPIRIT THAT OFFERS AN INCREDIBLY RICH FLAVOR, A LIGHT STRUCTURE, AND A SMOOTH FINISH. IICHIKO SHOCHU IS MADE FROM 100% BARLEY AND CRAFTED IN THE OITA PREFECTURE, A REGION FAMOUS FOR ITS DENSE CEDAR FOREST, MOUNTAINOUS TERRAIN, AND GEOTHERMAL SPRINGS.
  • SOMBRA MEZCAL
FIRE, ROCK AND EARTH – THAT'S ALL IT TAKES. ESPADIN AGAVE ARE HAND HARVESTED ON THE STEEP SLOPES OF THE OAXACAN SIERRA. THE HEARTS ARE SLOWLY ROASTED IN A ROCK PIT OVER AN OAK FIRE AND THEN GROUND, FERMENTED, AND EXPERTLY DISTILLED. THE RESULT, SOMBRA, IS ONE OF THE MOST TASTEFUL AND FINEST SPIRITS PRODUCED ON AND OF OUR EARTH.
