Hernan Griccini
Executive Chef Hernan Griccini helms the kitchen of Amalia, the Mediterranean-inspired restaurant located in the Lennox Hotel Miami Beach. With nearly 20 years of industry experience, the Argentina native has worked in some of the world’s most acclaimed kitchens.
The young chef grew up in the town of Santa Fe, Argentina, where his family owned and operated a bakery. He spent the majority of his adolescence watching his parents and grandmother in the kitchen, and naturally developed a passion for the craft. In 2003, Griccini decided to pursue a career in the culinary arts and moved to Mendoza to work at Park Hyatt, his first of many successes in the industry. He quickly moved up the ranks and accepted a position as Sous Chef at Le Mistral in the Four Seasons Hotel Argentina. During this time, Griccini taught gastronomy courses in Rosario and Buenos Aires.
In 2012, Griccini went on to become one of the founding members of GAJO (Gastronomía Argentina Joven), an alliance of young chefs that aim to elevate Argentinean cuisine through education. The talented toque also held a variety of positions at highly acclaimed restaurants such as Oviedo Restaurante and Relais & Chateaux in Argentina, as well as Villa Azur and Restaurante Mandolina in Mexico City. Additionally, Griccini helmed the kitchens at renowned resorts in the Dominican Republic and Mexico such as Eden Roc Cap Cana, Live Aqua Mexico City, and The Fives Downtown Hotel, Curio Collection by Hilton Playa del Carmen. Stints at Spanish Michelin Star restaurant Nerua Guggenheim Bilbao gave Griccini a top- notch education in both authentic and modern fusion Spanish cuisine.
In 2021, Griccini accepted an invitation to join the team at Lennox Hotel Miami Beach as Executive Chef of Amalia. In his current role, Griccini taps into his ample experience and extensive knowledge in various cuisines to execute the creative culinary vision for the restaurant. At Amalia, the young chef focuses on a seasonal, ingredient-driven menu that melds Mediterranean cuisine with the flavors of Latin America.
