Julian Uribe
Julian Uribe established Gorilla City in 2018 as a pop-up concept after spending a year crisscrossing the US tasting and testing barbeque techniques. After filling up on meats from Texas to Tennessee and fine-tuning his skills, Julian brought his flavor findings back to Miami. Gorilla City’s successful pop-up led to a two-year stint inside Doral’s Tripping Animals Brewery and earned him Miami New Times’ “Best Brewery Food” in 2021. In 2022, Julian took his talents to Miami’s MiMo neighborhood, relocating to the Miami landmark, The Anderson, and expanded his food offerings.
Gorilla City’s meat-centric menu pays homage to BBQ and roasting styles across the country and marks Julian’s foray from the FOH to the BOH. Julian has managed and worked at high-end establishments across the globe and earned his Masters in Hospitality Management.
