Spencer Coplan
Spencer Coplan is a community first chef. Originally from Bainbridge Island, located in the Puget Sound next to Seattle, he has worked in a vast variety of culinary restaurants across the US. This has expanded his experience of regional ingredients and techniques. He’s worked under exceptional chefs such as John Sundstorm at James Beard winning Lark, Michelin Starred Michael Mina, and Memphis’ best, Michael Hudman and Andy Ticer.
The root of all of these experiences brought him closer to the communities around him and the importance of local ingredients and availability. He puts emphasis on the importance of ethical consumption, nose to tail and leaf to root, particularly from working alongside the crew at Home Place Pastures in Como, MS and the traveling chef duo of We are Slow Burn, originally from LA. Now currently stationed in the Adirondacks, he’s closer than ever to the farmers and their agriculture offerings and feeding the community
