Born in Phoenix, Arizona, chef Todd Erickson developed a love for good food at an early age from the strong women in his life. Fun and light nightly meals prepared by his mother Julie, stick-to-your-ribs hearty farmhouse cuisine from his grandmother Lois, and Mad Men-era dinner parties thrown by his “Grandma Nancy” primed Erickson’s imagination and drive for a career in culinary arts.
After graduating from the Culinary Institute of America in Hyde Park, New York, Erickson put down roots in Dallas, Texas. His first Dallas restaurant made multiple “Top Five” lists in various publications and chef Erickson was named “Best Chef Under 30”. Erickson also consulted on two additional restaurant projects in Dallas before moving to Miami, Florida with his life partner, Joel.
In Miami, chef Erickson quickly became a fixture in the vibrant city’s culinary scene. His first restaurant Haven, a high energy bistro lounge in the heart of South Beach, earned him praise from local food critics and television personalities.
Following the momentum of Haven, Erickson opened Huahua’s Taqueria just a few doors down from Haven. Huahua’s fast casual tacos and frosty margaritas were an instant success, with Food Network naming his fried chicken taco one of the nations’ 50 greatest tacos. Huahua’s was also named one of the top ten taquerias in the United States by Zagat.
Erickson was then tapped to create the menu at GLAM Vegan (Green Living Animals Matter) in Midtown Miami. The restaurant featured organic, plant-based cuisine and set the trail for Miami’s vegan scene to explode.
Currently, Erickson is the culinary consultant at GLOW, a fast-casual restaurant in Miami’s artistic Wynwood neighborhood. The restaurant, which focuses on healthy eating, is committed to donating all its profits to various organizations involved in furthering education for women and girls.
Erickson is also chef/partner at Munchies Pizza Barcade. Located in Downtown Fort Lauderdale, Munchies offers gourmet pizza in a 1980s retro-themed space filled with vintage arcade games that guests can play.
The chef is also owner of The Todd’s , a Fort Lauderdale-based catering and events company, and consults for various restaurants including Anse Chastanet and Jade Mountain resorts in Soufriere, Saint Lucia.
Erickson resides in Fort Lauderdale, FL.
