She fondly recalls the intricate lines on her grandmother’s hands and strives to imbue that same love and meticulousness into every aspect of her culinary creations, which she graciously shares with her family and clients.
From her humble beginnings in culinary school to her extensive experience in catering and culinary exploration, Vicky’s palate is a canvas that she continually paints with flavors. She roams eateries and farmer’s markets, seeking novel experiences that ignite her creativity. To Vicky, food is not just sustenance; it’s the essence of life, and she seizes every opportunity to celebrate it.
In a dynamic partnership, Vicky joined forces with her nephew, Alec Fernandez, to birth Dos Croquetas, Miami’s pioneering Croquets Bar. Their vision was to reimagine and elevate the traditional Cuban croqueta into a work of artisanal craftsmanship. While Vicky concentrates on curating menus and pioneering culinary research and development, Alec spearheads marketing and business development efforts.
