Björn Weissgerber was brought up in Lauf, Southern Germany. His parents owned a restaurant there, and he would help out whenever he could, fully immersed in a world of flavour and ingredients. Hailing from German and Swedish stock, his German roots give him his strong precision in his work; and his Scandinavian blood gives him a free spirit, which allows his creativity to run wild.
Not only has Weissgerber travelled from the occident to the orient for his craft, he has also worked at some of the greatest restaurants of our time – El Bulli, Arzak, Mugaritz, French Laundry and El Celler de Can Roca. He considers his mentors to be Germany’s legend Alfons Schuhbeck and Austria’s distinguished Eckart Witzigmann, with whom he worked early on in his career. This tremendous diversity has given him an extraordinary range of skills – from traditional to modern, from German to French, from creatively experimental to Japanese contemporary. He had his own Michelin star at the tender age of 27 when he was running Ca’s Puers in Mallorca in 2002. Weissgerber was also instrumental in setting up new restaurants all over the world for the Zuma group.
2016 saw a change of direction for him, with Björn heading up the kitchen at critically-acclaimed Sexy Fish in Mayfair, London, before overseeing the kitchen ahead of this Fall’s Sexy Fish Miami launch. He is energetic and inspiring and has already proved himself a valued asset to the Caprice group.
