The subject of immigration is at the forefront of America’s civic conversation – and the hospitality industry, with legal immigrants comprising more than 20 percent of workers in food service, and more than 30 percent of hotel staff, is keeping a close eye on how policy updates continue to unfold. Adding in undocumented workers brings those numbers even higher. Join us for a conversation with James Beard-award winning chef and humanitarian José Andrés and Emmy-and Peabody Award-winning broadcast journalist María Elena Salinas, who will explore the evolving state of affairs touching not only on immigration policies themselves, but more specifically what it means for the hospitality industry – reliant on both documented and undocumented workers – going forward.

Join Gabriele Corcos and Hugo Ortega for an in-depth discussion about alternative proteins and their role in our future eating habits. How can we work to incorporate alternative proteins and “non-Western” ingredients as part of our diets, and how can they help us become more sustainable?  Many cultures around the world have historically embraced entomophagy - insects have been part of certain cultures for centuries, and are regarded as “normal” ingredients in the daily diet. On the other hand, Western cultures have “evolved” their eating habits away from certain food categories throughout history, landing themselves into a sustainability conundrum.  Demand for animal proteins has resulted in excessive co2 emissions and consequent pollution, a progressive degradation of protein quality, “not-anymore-humane” farming practices, and ultimately has sparked a social awakening in both the industry and in the minds of consumers. We will tackle these issues during this panel discussion in an attempt to normalize the conversation between consumers, insect farmers and communication outlets, like print and TV.

CEO Rhonda Carano takes you on the journey of her family-owned winery’s road to becoming an iconic producer of high-elevation, sustainably-farmed 2015 Cabernet Sauvignons, with a guided, comparative tasting of Ferrari-Carano’s award-winning Trésor, PreVail West Face and PreVail Back Forty wines. Led by Director of Vineyard Operations Steve Domenichelli and Executive Winemaker Sarah Quider, you will have the unique opportunity to experience these select 2012 library selections and 2015 cabernet sauvignons from Alexander Valley and Sonoma County, breaking down each vintage in flavor profile, terroir, climate influences and sustainable farming practices. Ferrari-Carano has long practiced sustainable farming techniques to help protect the lands they farm – both vineyard and agriculture – and the environment that surrounds them. In 2015, Ferrari-Carano’s 24 estate vineyards throughout Sonoma, Napa and Mendocino counties, earned California Sustainable Winegrowing Alliance (CSWA) certification. Recognized for their numerous efforts to preserve the land for future generations while producing memorable, sustainable wines of outstanding quality, this certification acknowledges Ferrari-Carano for being conscientious of the environment, surroundings, neighbors and their labor force. Creating unique and memorable wines from vineyard to bottle – to help the vines produce the best fruit possible, and in turn, the best wine possible – has always been Ferrari-Carano’s goal. “The trademark of Ferrari-Carano is our people, our vineyards and the positive family team spirit we all share,” says Rhonda Carano. “It’s a large family who has grown together over the years – vineyard, cellar, winemaking – and understands the philosophy and direction of what makes Ferrari-Carano world class. We’ve come together to achieve a common goal: a delicious bottle of wine at the end of the day.” FEATURED WINES: 2012 Trésor, Sonoma County 2012 PreVail West Face, Alexander Valley 2012 PreVail Back Forty, Alexander Valley 2015 Trésor, Sonoma County 2015 PreVail West Face, Alexander Valley 2015 PreVail Back Forty, Alexander Valley

The renowned luxury resort Cala di Volpe is nestled across Costa Smeralda - or The Emerald Coast - in Porto Cervo, Italy, and we’re bringing Executive Chef Maurizio Locatelli to one of Miami’s most artistic destinations, Perez Art Museum Miami, where Executive Chef Kaytlin Dangaran helms the kitchen at Verde. Cala di Volpe’s allure comes not only from its sophistication as a resort, but also from its historic charm reminiscent of a classic Mediterranean fishing village. Locatelli and Dangaran are joined by 2017 James Beard Award-winner (Best Chef: Great Lakes) and Michelin-starred chef, Sarah Grueneberg, chef/owner of Monteverde Restaurant & Pastificio in Chicago, IL. Grueneberg is known for her fresh, hand-made pastas and adventurous take on traditional Italian dishes, through the use of global ingredients and cooking methods not usually seen in the Italian kitchen. From the Sardinian coast to the shores of the Great Lakes, Locatelli, Dangaran and Grueneberg will present a Mediterranean-inspired dinner that will take diners on a culinary journey across the Atlantic, featuring the freshest flavors best appreciated by the sophisticated palates they consistently serve - all complemented by wines from the Kim Crawford portfolio. This incredible, artistic evening will be curated by Cultured Magazine and its Founder/Editor-in-Chief, Sarah Harrelson, for a night of unparalleled design. Guests will be assigned seating prior to this event. We can only guarantee guests who purchased tickets together will be seated together. If you would like to be seated with another guest(s), please send your request via email to tickets@sobewff.org.

All in all, what distinguishes Champagne Pol Roger is “soul.” From its origins in the early 19th century to today, the Pol Roger and the de Billy families persist in calling their Champagnes “wines” to drive the point that theirs are vinous, flavorful, rich, sapid Champagnes. Among the Grande Marque Champagne Houses, Pol Roger is among few that remain family concerns. Pol Roger is also among the limited Champagne Houses that still invest in the time-consuming, artesanal work of making Champagne a l’ancienne - with hand riddling. The cellars of Pol Roger are among the deepest and coolest in Champagne providing perfect conditions for the prise de mousse (the development of the Champagne in bottle and the “finesse” of the “bead” or bubble) and for the long aging of our Champagne in bottles. All of the champagnes are aged three times longer than the legislation requires, which is also a substantial investment in ensuring quality. This long aging adds finesse to the champagne’s complexity and elegance. Time is quality in Champagne! During this seminar, guests will taste several champagnes produced at Pol Roger - from the flagship Brut Reserve “White Foil” to the prestigious cuvee “Sir Winston Churchill.” FEATURED WINES: Pol Roger Brut Reserve "White Foil" NV Pol Roger Cuvée Prestige "Sir Winston Churchill" 2008 Pol Roger Brut Rosé 2009 Pol Roger Brut Vintage 2009 Pol Roger Brut "Blanc de Blancs" 2009 Pol Roger Rich NV

The monk that time forgot - port, the rich, sweet, fortified wine that is enjoyed across the world, owes its existence to one monk, forgotten by history, in the remote Douro Valley. It is alleged that two wine merchants in the seventeenth century exploring Portugal’s Douro valley discovered the Abbot of a Lamego monastery adding grape spirit to his wine early on in its fermentation to preserve its sweetness. This was embryonic port. They decided to use this method of ‘fortification’ to preserve their wines for the long sea journey back to England. This wine took its name from the city where these traders had their base: Oporto (Porto), from where it is shipped to the world to this day. Port is still produced in this way, by intentionally interrupting the fermentation of the grape must (or juice) by the addition of a clear grape spirit called aguardente, generally referred to as ‘brandy’. This preserves a large amount of the grapes’ natural sugars, thereby giving port its characteristic sweetness and richness. The grapes that are used to make port must be grown in the mountainous Upper Douro region of Northern Portugal, the world’s first officially demarcated wine region in 1756. This protected region is the only place in the world that can produce authentic port. Join us in this seminar as we explore the world of Graham’s Ports. The Antinori family’s long, storied winemaking history is synonymous with the regions of Tuscany and Umbria, but its passion for innovation led to the discovery of a Napa Valley estate rich with winegrowing potential. The landscape of this beautiful estate, with its rolling hills, greatly recalls Tuscany making it an ideal area for cultivating grapes. Antica represents “Antinori California” and is truly a blend of Italy and California, in both name and winemaking style. Antica is the realization of the family's longstanding desire to produce wines with personality and style in the Napa Valley. The Antinori family’s winegrowing philosophy – to produce wines with passion, patience and perseverance – is expressed fully at Antica Napa Valley. In 1985, the Antinori Family purchased a breathtaking estate located high in the eastern mountains of Napa Valley, 1,800 feet above sea level. The Antinori Family was attracted to this spectacular property, located on a high plateau in the Atlas Peak District, because of its ideal winegrowing potential; its rocky soils, high elevations and spectacular landscape. Today, there are 600 acres of vineyard planted on the estate. The wines of Antica Napa Valley are estate grown and estate produced. Three wines—the Cabernet Sauvignon, Chardonnay and Townsend Vineyard Cabernet Sauvignon—are available in select markets across the US and abroad. The others are designated as Soprattutto wines, which are limited-production estate wines available only from the winery. These include Sangiovese, Pinot Noir, Sauvignon Blanc and a Rosé of Sangiovese, called Fossino. The winery produces a Napa Valley Chardonnay, Cabernet Sauvignon and single-vineyard Townsend Cabernet Sauvignon that are all estate grown and bottled, as well as, several other wines that are only available through the winery. In addition to the Antica Napa Valley Cabernet Sauvignon, Glenn Salva will present two vintages of the Antinori family’s iconic Guado al Tasso Bolgheri DOC Superiore. This is a Cabernet-based wine from Bolgheri, on the Tuscan coast. Join us for a taste of the Bayou by the beach! Cody and Samantha "Sam" Carroll are the dynamic husband and wife duo who serve as hosts of Cajun Aces on Food Network.  Their critically acclaimed restaurant Sac-A-Lait is set in an old cotton mill in the Warehouse District of New Orleans, LO, and features unique features completely handcrafted by the chefs and their families - like reclaimed 140-year-old pine from a nearby Broom Factory and a bar made with hand-crushed oyster shells. They're bringing their keen attention to detail and unique culinary-style to the Festival for the first time to guide a limited number of lucky guests through a crash course in Cajun cuisine. Together, they will share their prowess for designing a menu featuring the Bayou-based seasons of farming, hunting and fishing at home. The Calling is an exciting new winery joint venture between veteran sports commentator Jim Nantz and wine industry veteran Peter Deutsch. Join The Calling’s Theo Rutherford on an exploration through the diverse wine regions of Sonoma County. We will discover how differences in soil, climate and topography impact 3 different Sonoma varieties – Chardonnay, Pinot Noir and Cabernet Sauvignon – grown in the best appellations Sonoma has to offer. 2017 Dutton Ranch, Russian River Valley vs. Sonoma Coast Chardonnay Grown in Goldridge sandy loam soil, the Dutton Ranch Chardonnay is 100% barrel fermented and aged sur lie for 11 months to create a lush wine with flavors of lemon crud, crème brulee and pear. By contrast the Sonoma Coast Chardonnay is grown in a cooler more maritime climate. Winemakers use 50% stainless steel and 50% barrel fermentation to bring out the crisp acidity and flavors of green apple and bright citrus. 2016 Russian River Valley vs. Sonoma Coast Pinot Noir Sourced from several different vineyards, the Russian River Valley Pinot Noir is a blend of the strong minerality and structural backbone from the cooler sites and the complexity and richness from the higher altitude vines. On the other hand, our Patriarch Pinot Noir is sourced entirely from Putnam Vineyard just 6 miles from the Pacific Ocean. Surrounded by redwood trees and dramatically impacted by the coastal climate, this wine shows plenty of richness and finesse. 2014 Cabernet Sauvignon, Alexander Valley vs. Moon Mountain The Alexander Valley is a broad valley floor bisected by the Russian River and surrounded by hills that block the coastal fog. This results in a warm climate which is perfect for growing full-bodied Cabernet Sauvignon with ripe blackberry and plum flavors. Our Tribute, on the other hand, comes from the high-altitude Moon Mountain District in the Mayacamas mountains. With ancient volcanic soils, warm days and cooling breezes, this area produces powerful, intense Cabernet with rich concentrated flavors. FEATURED WINES: 2017 Sonoma Coast Chardonnay 2017 Dutton Ranch Chardonnay 2016 Russian River Valley Pinot Noir 2016 Patriarch Pinot Noir (Putnam Vineyard, Sonoma Coast) 2014 Alexander Valley Cabernet Sauvignon 2014 Our Tribute Cabernet Sauvignon (Moon Mountain)

Michel Chapoutier is one of the most highly regarded winemakers in France. With his guidance, the family firm has become the benchmark Rhône wine producer. He combines the modern and the traditional: crusading for biodynamic winemaking, while expanding operations around the globe and experimenting with cutting edge winemaking techniques. Today, M. Chapoutier is the only producer to own vineyards in all of the major Rhône appellations. While considered to be one large region, the Rhône is better thought of as divided into two distinct parts – the North and the South. These two parts of the Rhône differ in terms of climate, soil, dominant grape variety, trellising and style of wine. Antonin Bonnet, the winery’s Export Director, will take you on a Tour of M. Chapoutier and some of the world’s greatest Rhône Wines.
