Culinary Director Abram Bissell, who grew up in Islamorada in the Florida Keys, has spent his career shaping some of the world’s most celebrated restaurants and dining destinations, bringing vision, precision, and a deep respect for ingredients to every plate. Known for building layered, high-performance culinary programs, he is sought after for complex, multi-outlet properties where food and beverage are at the heart of the guest experience.
Abram’s culinary foundation was formed in California at The Post Ranch Inn in Big Sur, where he developed a lasting commitment to agriculture, seasonality, and the integrity of pristine ingredients. His philosophy sharpened further during his tenure as Executive Chef of Eleven Madison Park, where under his leadership the restaurant earned four stars from The New York Times, three Michelin stars, and consistent placement in the top ten of The World’s 50 Best Restaurants.
As the opening Executive Chef of NoMad New York, Abram helped redefine modern luxury dining—creating a warm yet ambitious experience that garnered a Michelin star and three New York Times stars. Over the course of his career, he has earned a total of seven Michelin stars, a testament to his skill, creativity, and exacting standards.
Now, as Culinary Director of The Shelborne by Proper, Abram is bringing his globally honed expertise back to South Florida—designing a distinctive, multi-venue program that blends vibrant Latin American and Caribbean influences with an elevated, product-driven approach.
