David Montelongo
David Montelongo was born in San Diego, Jalisco, Mexico, and moved to the United States in 2003 in pursuit of greater opportunities both personally and professionally. His passion for food began at an early age, inspired by his grandmother, who owned a small restaurant in San Diego, Jalisco. Surrounded by family in the kitchen, David spent his childhood watching his mother and grandmother cook—sparking a lifelong dedication to the culinary arts.
He later pursued his formal culinary training in Mexico City, refining his craft and building the foundation for his career. Influenced by renowned chef Francisco Ruano from his home state of Jalisco, and guided by his brother, Chef Oscar Montelongo, David has continued to grow as a leader in the hospitality industry.
David’s professional journey has included his role as a restaurant chef at Hilton Orlando, where he gained invaluable experience before joining the Conrad Orlando as part of the opening culinary team—a milestone he considers one of his proudest accomplishments. What excites him most about hospitality is the opportunity it provides to connect with people and grow within a dynamic, creative industry.
Outside of the kitchen, David enjoys watching sports and cherishes time spent with his family. His most recent and meaningful role is being a father to his baby boy, Evan, who inspires him every day.
