His passion for food began on his grandfather’s boat, filleting fish and making ceviche fresh from the sea. From baker and fish butcher to leading kitchens alongside culinary icons including Laurent Tourondel, Daniel Ganem, José Andrés, Craig Koketsu, and Lorena Garcia, Chef G has developed a style that blends French technique, Latin soul, and American boldness. Now leading the kitchen at CATCH Miami Beach, he champions whole-beast and ocean-driven cooking, guided by his “more is more” philosophy.
