Known for his innovative approach to cooking and dedication to quality, Chef Iannuario is committed to creating exceptional dining experiences that reflect the vibrancy of Italian culinary traditions.
From his earliest moments in Milan, Italy, cooking has been woven into the fabric of Chef Iannuario’s life. As the story goes, his mother went into labor while preparing dinner and as a child, he slept in the kitchen. Under the watchful eyes of his grandmother and parents, he learned the fundamentals of Italian cuisine: selecting pristine ingredients, mastering preparation techniques and eventually taking on the responsibility of cooking nightly family meals. These formative experiences instilled a deep appreciation for food and the power of simple, seasonal ingredients, shaping his culinary identity.
Chef Iannuario earned his culinary arts degree from Istituto Alberghiero Professionale “Carlo Porta” in Milan. He then honed his craft under renowned chefs, including Michelin-starred Gualtiero Marchesi. His career highlights include being named “Best Young Chef” in Cremona in 2005 and serving as Executive Sous Chef at Giorgio Armani’s Emporio Armani Caffè in Milan, where he developed his signature ability to blend traditional recipes with contemporary flair.
Chef Iannuario’s culinary journey spans Europe and the United States, where he has led kitchens in Miami, Dallas, and Las Vegas. Notably, he has helmed esteemed restaurants such as Da Mario Ristorante Autentico in Frisco, Texas, and La Stella Cucina Verace in Dallas, Texas.
At Cadillac Hotel & Beach Club, Chef Iannuario brings his culinary vision to life, crafting menus that transport diners to the Italian coastline while enjoying the views and art deco style of Miami Beach’s Ocean Drive. “What makes a restaurant a great restaurant is when the people in the dining room are able to see through the details and create an instant connection with guests,” he says. “It’s when we go above and beyond that we make the difference!”
