Over the past 13 years, Dania has worked with some of the most iconic names in hospitality, including The Setai, SLS, and Fontainebleau, before joining Hyatt. Each experience shaped her approach to food—not just as sustenance, but as an art form and a source of inspiration.
Drawing from her French and Mediterranean culinary background and blending it with Miami’s eclectic flavors, Dania creates dishes that tell a story. Every plate reflects her belief that food is a canvas, and through it, she shares her heritage, her experiences, and her love for innovation.
