Chef Jezhiel Mark Canlas bridges two worlds as Executive Sushi Chef for both Kapow and MINŌ, embodying versatility that few chefs can master. At Kapow’s multiple South Florida locations, he leads the bold, energetic sushi program that aligns with the restaurant’s rebellious spirit and unreasonable hospitality. At MINŌ, the intimate 30-seat members-only omakase bar, he presides over the sacred 10-seat counter, channeling shokunin craftsmanship and omotenashi to create seasonal Japanese experiences.
His impressive background includes serving as Chef de Cuisine at Miami Beach’s prestigious Mila Omakase (2022-2025), Head Sushi Chef at Lionfish in Delray Beach (2021-2022), and nearly eight years perfecting his foundation at Aah Loi and Talay Thai in Palm Beach Gardens (2013-2021).
