Founded in 2001 by Mike Herrera and Jennifer Liu, Baked and Loaded began as a wild idea that turned into a delicious reality. Each potato is baked to perfection in a King Edward Oven, split open, slathered with butter, and then loaded with your choice of mouthwatering toppings — from pulled pork, broccoli, mac and cheese, and chili to made-from-scratch meatballs, crispy bacon, sour cream, and chives. With endless combinations, every potato tells its own story. In 2025, Baked and Loaded welcomed Mike Iannone as a partner, adding his restaurant expertise and signature recipes to the mix. His contributions, including the beloved Iannone Meatballs and seasonal creations like the Twice-Baked Shepherd’s Pie Potato, Italian Sausage Potato, and Potato Skins, have become instant favorites. Together, Mike, Mike, and Jennifer bring love, passion, and years of industry experience to create the best loaded baked potato you’ll ever have. With plans to expand across South Florida and eventually nationwide, Baked and Loaded continues to redefine comfort food — one perfectly baked potato at a time.
