Simona Greenberg is the founder of Neighborhood Bagels, a small-batch Miami bagel project built on craft, warmth, and a genuine love for bringing people together through food. Raised between New Jersey and New York, food was always how she connected with others — simple, comforting, and meant to be shared.
After moving to Miami, Simona began developing bagel recipes at home when she couldn’t find anything that tasted or felt like the bagels she grew up with. What started as curiosity turned into a deep focus on technique — spending months refining dough formulas, fermentation schedules, and hand-rolling methods to achieve the ideal balance of chew, shine, and structure.
Neighborhood Bagels launched in early 2025 as a weekly preorder pop-up, with every bagel and schmear made entirely in-house. It quickly became a sell-out local favorite, earning a loyal following for its attention to detail and hospitality-driven approach.
As demand grew, Simona moved production into a shared commercial kitchen, scaling thoughtfully while staying true to traditional methods and small-batch execution. She is now developing Neighborhood Bagels’ first brick-and-mortar location, continuing her mission to bring intentional, handmade bagels and a welcoming neighborhood spirit to Miami — one dough ball and one neighbor at a time.
