CHEF TRINI (Gregory Boissiere) is a Trinidad-born, Miami-based chef whose magnetic personality and bold Caribbean-Latin fusion cooking have made him a rising star on the culinary scene. From his early days in San Juan, Trinidad learning recipes from his father to building his own food truck in The Windy City of Chicago from the ground up, Chef Trini’s journey is a testament to passion, hustle, and an unwavering commitment to representing Caribbean cuisine on the world stage.
After relocating to the U.S. at 13, cooking became his connection to home. For over two decades, Chef Trini built his expertise through the trades, but the pull of the kitchen never faded.
He began honing his craft in kitchens across the U.S. including a formative stint at the Dewars Lounge at Miami’s AAA Arena. Chef Trini launched his food truck in 2017 transforming it into a mobile flavor unit bringing his food to the streets. Carrying that Trini to D Bone flavor profile in every dish he creates, his approach blends traditional Trinidadian techniques with Latin American influences, resulting in crowd-pleasers like his Oxtail Philly Cheesesteak and Baja Fish Tacos with Mango Pico.
Known for his inviting energy and ability to turn every gathering into a celebration, Chef Trini embodies the spirit of island hospitality. “My food gives you a taste of the islands without having to be there.”
