Assistant Executive Pastry Chef
Chef Ignacio Colmenares is Assistant Executive Pastry Chef for Fontainebleau Miami Beach. An internationally trained chef with nearly two decades of experience in the culinary industry, Chef Colmenares oversees the creation of desserts for Fontainebleau Miami Beach’s pastry shop, supporting the resort’s banquets and restaurant portfolio, including the exquisite handmade bakery, Chez Bon Bon.
Chef Colmenares joined Fontainebleau Miami Beach in 2017 as Sous Chef and was promoted to Production Chef in 2020. He has served as Assistant Executive Pastry Chef since 2021.
Prior to his tenure at Fontainebleau Miami Beach, Chef Colmenares honed his craft at several esteemed 3-Star Michelin restaurants in California, including The Restaurant at Meadowood and The French Laundry. His international experience includes working with renowned Chef Alain Ducasse in Puerto Rico and contributing to the culinary excellence at the 3-Star Michelin Pavillon Ledoyen in Paris, France.
A native of Caracas, Venezuela, Chef Colmenares studied at L’Ecole Ferrandi in Paris and Centro de Estudios Gastronómicos (CEGA) in Caracas.
