Juan Borjas – Executive Chef, Gekko
Chef Juan Borjas is an Executive Chef with over 30 years of experience in the hospitality industry, bringing refined technique, bold flavors, and strong leadership to every kitchen he leads.
His career spans New York and Miami, including training at The French Culinary Institute and working in acclaimed kitchens such as Le Cirque and The Stanton Social. He later became Executive Chef at Beauty & Essex by Tao Group and had the honor of cooking at The White House for President Barack Obama. Chef Juan has also appeared on Food Network’s Chopped.
Within Groot Hospitality, Chef Juan led Komodo Miami as Executive Chef for over seven years, later taking a hiatus from Groot to open Mimi Chinese on South Beach. He has since returned to Groot as Executive Chef of Gekko, the Japanese-inspired steakhouse by Groot Hospitality and Bad Bunny in the heart of Brickell, Miami.
