Launching his career in some of New York City’s most dynamic kitchens, Chef Marcelo Palacios brings a bold, globally inspired sensibility to his role as Executive Chef at RÒ Steakhouse, the highly anticipated Coral Gables concept redefining the modern steakhouse. Known for his balance of precision and personality, Palacios leads the culinary team with a focus on innovation, craftsmanship, and flavor, creating a menu that reimagines classic steakhouse fare through a contemporary, international lens.
Palacios’ culinary foundation was forged in New York, where he studied the art of cooking while immersing himself in French, Italian, Japanese, and Latin cuisines. His early training at acclaimed institutions, including Balthazar, Le Cirque, and Essex House, shaped his refined technique and dynamic palate, blending classical discipline with modern creativity.
He later joined the opening team of BLT Steak at The Betsy Hotel under celebrated chef Laurent Tourondel, before helping define Miami’s fine dining landscape through his tenure with Myles Restaurant Group. As Executive Chef at Prime Italian and Prime Fish, and eventually as Corporate Executive Chef overseeing Prime One Twelve, Prime Private, and Big Pink, Palacios became a driving force behind some of the city’s most iconic dining destinations.
Most recently, his work at Abbalè Modern Mediterranean deepened his exploration of lighter, coastal flavors, further expanding his global perspective. Now at the helm of RÒ Steakhouse, Chef Palacios channels his rich and diverse experience into a bold new vision for the steakhouse, one that celebrates quality, culture, and creativity in every detail.
